Bringing back a classic because you’ve been asking if the potato quiche works with sweet potato too… It does — and this one went viral for a reason. 🧡
This Sweet Potato Quiche Florentine has a sweet potato base and a creamy spinach filling. Just make sure to build the edges higher — sweet potatoes are more watery than regular potatoes, so they shrink a little while baking.

No pastry, no pre-cooking, no drama. Just shape your tortillas, fill them with salmon, spinach, and cherry tomatoes, pour over the egg mix, and bake. You’ll get crisp edges, a creamy centre, and dinner sorted in under 30 minutes.

One small tip (learned the hard way): seal those tortilla edges really well when shaping — or they might leak a little like one of mine did. Still came out perfect though… just slightly rebellious 😂
