Creamy Curry Chicken Bakes 🥥✨

Golden, flaky pastry filled with tender chicken simmered in a velvety coconut and cream curry sauce — pure comfort with a tropical twist! 🌴

It’s warm, hearty, and just what you need when you fancy something comforting with a little kick. Serve it up with buttery mash and colourful veg for the perfect meal that feels like a hug on a plate. 💛


Serves: 4
Prep time: 20 mins
Cook time: 35–40 mins


🛒 Ingredients

For the pastry bakes:
• 450g chicken tenders (diced)
• 2 tbsp curry powder
• 1 tbsp honey jerk-style seasoning
• 400ml coconut milk
• 250ml double cream (extra creamy!)
• 1 tsp thyme (remove before filling)
• 1 sheet puff pastry (320g, supermarket own brand)
• 1 beaten egg (for glazing)

👩‍🍳 Method

1. Cook the filling
1. Heat oil in a pan, add diced chicken and cook until sealed.
2. Stir in curry powder and jerk-style seasoning.
3. Add coconut milk, double cream, and thyme. Simmer for 8–10 mins until thickened.
4. Remove thyme and let the mixture cool before filling the pastry.

2. Assemble the pastry bakes
1. Preheat oven to 200°C (fan 180°C).
2. Roll out puff pastry and cut into 4 rectangles.
3. Spoon cooled filling onto one half, fold, and seal edges with a fork.
4. Brush tops with egg and bake for 20–25 mins until golden and puffed.

3. Serve
Plate up the golden pastry bakes with mash, veg, or just by its self and drizzle with leftover curry sauce for extra flavour. 🥰

🌴 Caribbean Curry Pastry Bakes

• 38g butter & 75ml milk
• 200g mixed veg (carrots, green beans, broccoli)

• Mash: Boil potatoes 12–15 mins, mash with butter & milk, season.
• Veg: Steam/boil mixed veg 4–5 mins until tender.

Plate up pastry bakes with mash, veg, and drizzle with leftover curry gravy if you’ve got it.
