Creamy White Bean Soup

Yields: 4 servings

Ingredients:

1 tablespoon olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1 can (15 ounces) white beans, drained and rinsed
4 cups vegetable broth

Instructions:

Sauté vegetables: Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Cook, stirring occasionally, until softened, about 5 minutes.

Add herbs and spices: Stir in thyme, rosemary, and red pepper flakes (if using). Cook for 1 minute more.

Add beans and broth: Add white beans and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the vegetables are tender.

Blend: Use a blender or immersion blender to purée the soup until smooth.

Add milk and season: Stir in milk and season with salt and pepper to taste. Heat through for a few minutes more.

Serve: Serve hot with crusty bread.

Tips:

Cranberry and Turkey Stuffing Balls 🦃

Ingredients:

1 cup breadcrumbs
1/2 cup dried cranberries
1/4 cup chopped parsley
1/4 cup chopped onion
1/4 cup melted butter
1 large egg
1 cup cooked turkey, chopped
1/4 teaspoon salt
1/8 teaspoon black pepper

Instructions:

Combine ingredients: In a large bowl, combine breadcrumbs, cranberries, parsley, onion, melted butter, egg, cooked turkey, salt, and pepper. Stir until well combined.

Shape balls: Scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used.

Cook: Place the balls on a baking sheet lined with parchment paper. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until golden brown.

Serve: Serve the stuffing balls warm with your favourite roast dinner.

Tips:

For a more flavourful stuffing, add a pinch of grated nutmeg or ground cloves.

Cake: 2 cups flour, 2 tsp baking powder, 1/2 tsp salt, 1 cup sugar, 1/2 cup butter, 2 eggs, 1/2 cup pistachio lager, 1/4 cup buttermilk, 1 tsp vanilla.

Frosting: 1/2 cup butter, 2 cups powdered sugar, 1/4 cup chopped pistachios, 1 tsp pistachio extract, 2-3 tbsp pistachio lager.

Drizzle: 1/2 cup white chocolate chips, 1 tbsp heavy cream.

Instructions:

Make cake: Preheat oven to 350°F. Combine dry ingredients. Cream butter and sugar. Add eggs. Alternate dry and wet ingredients. Stir in pistachio lager, buttermilk, and vanilla. Bake in a 9-inch round pan for 30-35 minutes. Let cool.

Make frosting: Cream butter and powdered sugar. Stir in pistachios, extract, and lager.

2 pounds potatoes, peeled and cubed
1 large onion, chopped

1/2 cup heavy cream

1 pound ground beef
1 large onion, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
Salt and pepper to taste
1 can (15 ounces) tomato sauce
1 can (15 ounces) kidney beans, rinsed and drained
1 cup shredded cheddar cheese

Instructions:

Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
Sauté the vegetables: Add the onion and garlic to the skillet. Cook until the onion is softened, about 5-7 minutes.
Add the seasonings: Stir in the oregano, thyme, salt, and pepper. Cook for 1 minute more.

Ingredients:

1 lb ground lamb
1 onion, chopped
2 carrots, chopped

1/2 cup peas
2 lbs potatoes, peeled and quartered
1/4 cup butter
1/2 cup milk

Instructions:

Brown lamb, add veggies, and cook until softened.
Stir in thyme, rosemary, salt, pepper, beef broth, and peas. Simmer for 15 minutes.
Mash potatoes with butter, milk, salt, and pepper.
Layer lamb mixture in a baking dish, top with mashed potatoes.
Bake at 375°F for 30-35 minutes.
