I used just 3 oranges to make 1 jar of candied chocolate peel, 6 orange lollies and enough vitamin C supplements for 2 months. Using every part of your fruit and vegetables it’s only rewarding but it also helps to save money.

CANDIED CHOCOLATE PEEL: 🍊🍫

peels of 3 oranges
•1-1/2 x cups brown sugar
•2 x cups water
•160 x g dark chocolate
•1/2 x cup chopped almonds
•sea salt optional

🥣STEP BY STEP:

-slice the orange peels of the size you prefer in this case I prefer them quite thin so each orange makes 8 parts.
-blanch the peels 2 times (because I use the whole peel keeping the white parts that are a bit bitter it will help to take out the bitterness)
-place the peels on a grid and let them cool and dry.
-in the meantime melt the chocolate on a double boiler and add the chopped almonds .
-coat the peels in the chocolate
-place them on a baking paper and let them cool completely
-store in an airtight container
-they will last around 2 months

ICED LOLLIES: 🍭

3 x oranges juiced
Optional* any fruit (I used strawberries)

STEP BY STEP:

- Squeeze the oranges using a blender or your hands
- Blend one punnet of strawberries (or any fruit you like), I used frozen strawberries but fresh is perfectly fine
- Add your blended fruit to fill up half way your lollies mold
- Top up with the orange juice
- Freeze over night and enjoy

VITAMIN C SUPPLEMENT:

- Blend the leftover pulp of your juiced oranges
- Dehydrate until completely dry or use the oven at low temperature
- Blend the dehydrated pulp or use a mortar to turn it into a fine powder
- Add the powder to your capsules and take 1-2 a day

NOTE:

- 100g of fresh pulp contain 52 mg of vitamin C
- I bought the plant based film capsules online for about 5£ and they last for a really long time

I found this recipe in a book from 1960 from my great grandma and it has been passed on from generation after generation. My grandmother used to make it quite a lot, especially on a Sunday when my whole family was meeting up to enjoy launch.

I obviously added my own twist like saving the potato skin to make crispy potato skin!

The potatoes came from 2 containers, one was a first early variety and the other two second early which could have been left in the ground for longer but I love cooking them at this stage.

RECIPE VEGAN MAYO:

- 1 x Cup olive oil
- 1 x Cup soy milk
- 1 x Tbsp white vinegar
- 1 x Tbsp mustard
- 1 x Tbsp lemon juice
- 1 x Tsp salt
- 1 x Garlic clove

RECIPE POTATO SALAD:

- 6 x medium sized potatoes (or twice the amount in small potatoes)
- Chives
- 1 x Red Onion
- Pickles
- Parsley
- Salt & pepper
- 2-3 x Tbsp vegan mayo

*let cool down the potatoes before mixing

You can make your own plant based milk with almost any nuts, grains or seeds but this time we decided to use pistachios and it turned out to be absolutely delicious!

PISTACHIO MILK 🥛🌱
•1/4 cup pistachio
•500 ml water

STEP BY STEP🥣
-toast your 1/2 cup of pistachio on a pan for a couple of minutes
-use 1/4 cup only for the milk and the rest keep aside for the pistachio crumble
-add to the top of milky plant the 1/4 pistachio
-fill up the water tank and press the start button
-you’ll have a delicious creamy milk ready to be used for making the custard

PISTACHIO CRUMBLE
•1/4 cup pistachio
•leftover pistachio pulp
•4 tbsp x maple syrup

STEP BY STEP🥣
-roughly chop the 1/4 cup left of toasted pistachios
-in a bowl mix together the pistachio pulp , maple syrup and the chopped pistachios
-add to a baking tray and spread around
-bake for about 10-15 min at 160C
-keep an eye on it and stir sometimes to make sure it bakes well
-once ready will result still a bit wet but when cold will crumble easily

CUSTARD 🍮
•500 ml pistachio milk
•65g x maizena (corn starch)
•80g x sugar
•4 tbsp x lemon juice
•1 tsp x matcha (optional)

STEP BY STEP🥣
-in a deep pan mix together sugar ,corn starch matcha powder , lemon juice and add the milk a bit at the time while keep stirring so that you won’t have any lumps.
-bring to a boil and then lower the heat
-remember to constantly stir
-the mix will start to thicken and will be ready 3-4 min after starting to boil
-once ready let cool for a bit

PISTACHIO TART 🥧🌱
•pre-made shortcrust pastry
•pistachio curd
•pistachio crumble
•raspberry or any other berries
•extra : white chocolates drops

STEP BY STEP 🥣
-prepare the shortcrust pastry tart base
-let cool before adding the custard
-decorate the top with raspberry and pistachio crumbles
-store in an airtight container up to 4-5 days

Next time you grow or buy organic onions, don’t throw away the skins but use them to make this zero waste condiment which is absolutely delicious!

tip - when you use the oven to cook something, use the left over heat (oven off) to dry your onion and garlic skins. Just simply keep the door shut and let them dry.

ONION & GARLIC PEEL POWDER 🧅🧄

•onion peel
•garlic peel
•salt
•pepper
•paprika powder
•chilly powder
•optional flavours example: Mediterranean herbs, masala mix, chives & dill .

STEP BY STEP: 🥣

- wash your peels together or separately depending on the quantity you have if you want 2 different powders.
- tap them dry and place on a baking tray
- bake at 160* for about 5 min keep an eye on it and make sure they nice and crispy when ready (turn off the oven and leave the door shut until dry)
- blend them until you have a fine powder.
- add salt , pepper , paprika and chilly powder for a great fries potato seasoning or get creative using different mixed Mediterranean herbs or a masala mix .
- the quantity depends on how much peels you have so taste the mix first to get the best result

Wasabi is from the cabbage family and after you grate the root, it will loose the intense flavour in about 15-20 minutes.

🌱QUICK PICKLED WASABI STEMS
•8-10 xwasabi stems
•1 x tbsp salt
•2 x tbsp soy sauce
•1 x tbsp sugar
•1 x tbsp yuzu
•2 x teasp rice vinegar

🥣DIRECTIONS

-Chop the stems into smaller pieces
-mix all the ingredients together in a bowl and transfer them to a jar pressing them or adding something heavy on top .
-let it sit for 12-16 hours before consuming
-store in the fridge for a week

🌱WASABI SUSHI🍱
•Pre cooked sushi rice
•Wasabi leaves
•any Vegetables you like
•Wasabi Vegan mayo
•Sesame seeds
•serve with miso sauce

🥣DIRECTIONS
-cook the rice and let cool
-blanch the wasabi leaves for 30 seconds and let cool
-prep vegan mayo
-cut the vegetables in long thin stripes
-once everything is ready start to layer all the ingredients on the sushi mat and roll them into a firm roll
-add a dash of mayo on top and some sesame seeds
-serve with you favourite sushi dip (we used peanut miso sauce)

🍚SUSHI RICE

•1 x cups uncooked glutinous white rice (sushi rice)
•2 x cups water
•1/4 x cup rice vinegar
•1/2 x tbsp vegetable oil
•2 x tbsp white sugar
•1/2 teaspoon salt

🌱VEGAN MAYO

•1x teasp fresh wasabi paste or more depending on your taste
•1x cup soya milk
•1 x cup olive oil
•1 x teasp salt
•2 x tbsp lemon juice
•1 x tbsp mustard
•1 x tbsp maple syrup
•1x tbsp wasabi root

🥣 DIRECTIONS

-combine all ingredients (except the fresh wasabi )and blend until smooth.
-grate your wasabi root and combine to your mayo
-refrigerate until thick
-store in the fridge up to a week

Did you know that you can use every part of this plant and make pickled wasabi, wasabi mayo and wasabi sushi (change the lettering on screen and add “wasabi” with ding sound and zero waste in different lettering)

Wasabi comes from the cabbage family and takes roughly 24 months to grow under specific conditions. Clean the plant and remove the roots for composting.

You can pickle the stems by simply chopping them and mixing them with soy sauce, yuzu, salt, and vinegar to create a traditional delicacy called wasabi zuke.

The rhizomes, which are the best part, can be grated using a wasabi grater and mixed with plant-based mayo.

Surprisingly, even the leaves are absolutely delicious, especially when blanched and used in sushi, filled with your wasabi mayo and any vegetables on hand.

INGREDIENTS 🫧

Chocolate & Coffee🍫☕️
- 500g soap base
- 1/2 tsp coffee powder
- 1/2 tsp chocolate powder
- 2 tbsp E oil
- Mix the chocolate and coffee powder with the oil before adding to the melted soap
Optional: 10 drops of Vanilla essential oil

Calendula & Lemon 🍋🌼
- 500g soap base
- 2 tbsp grated shea butter
- 1 tbsp dry calendula petals
- 20 drops of lemon essential oil or calendula oil

Lavender & Oats 🌾🪻
- 500g soap base
- 2 tbsp oats
- 20 drops of lavender essential oil
- 2 tbsp dry lavender flowers

Orange & Rosemary 🍊🌿
- 500g soap base
- 1/2 tbsp finely chopped dry rosemary
- 10 drops of Orange essential oil
- 10 drops of rosemary essential oil
Optional: dry orange zest

Instructions: 🥣🫧
- Melt your soap base in a double boiler.
- If using shea butter, ensure it's grated, not chopped, as it takes longer to melt than the soap base.
- If using powder, first mix it thoroughly with an oil to eliminate clumps, then add it to the melted soap.
- Once melted, turn off the heat, then add your oils and the remaining ingredients.
- Note: Any extra ingredient you add or change can make the mixture harder, less oily, or solidify faster.
- Mix well and pour into the silicone mold.
- Let it solidify, then store in an airtight container.

Separate the leaves of mint or lemon balm and combine in a blender with olive oil until you get a smooth texture. infuse in a double boiler, strain with a cheesecloth and leave to set overnight.

Mix the liquid with soy or beeswax and melt in a double boiler. Add a few drops of Vitamin E oil and store in tin jars.

You can make loads of different combinations like this mint and lemon balm, lavender or calendula flowers.

DESCRIPTION:

These DIY natural lip balm are the perfect way to take care of your lips especially with the colder season in full swing. They also make a great gift for the fast approaching Christmas holidays.

INGREDIENTS:

-100 x g lemon balm/mint
-100 x ml olive oil
-beeswax (ratio 1:3 after double boiling olive oil and herbs)
-10 x drops vitamin e-oil

INSTRUCTIONS 🥣💄

- Blend or chop the herbs with oil.
- Add them to a heat-resistant jar and double boil for 2 hours, ensuring it's simmering, not boiling.
- After that, strain it using muslin and let the liquid rest for a minimum of 4 hours (we let it sit overnight) so the oil separates from the water.
- Once ready, slowly pour it into another jar, being careful not to include the water.
- Grate some beeswax in a 1:3 ratio to the liquid.
- Double boil until the wax melts.
- Let it cool for a few minutes and add the essential oil.
- Mix well and transfer to your chosen container.
- We don’t use essential oils in this recipe, but if you'd like a stronger aroma, you can add a few drops of peppermint essential oil.
