Orange Chicken Recipe:
Ingredients
For the chicken:
• 600g boneless skinless chicken breast or thighs, cut into 1-inch pieces
• 1 cup cornstarch
• 2 eggs, beaten
• Vegetable oil, for frying
For the orange sauce:
• 1 cup orange juice (fresh or bottled)
• 1/2 cup sugar
• 1/4 cup rice vinegar
• 1/3 cup soy sauce
• 2 cloves garlic, minced
• 1 tsp fresh ginger, minced (optional)
• 1 tbsp cornstarch + 2 tbsp water (slurry)
• 1/4 tsp chilli flakes (optional, for spice)
For garnish:
• Sesame seeds
• Sliced spring onions
Instructions
1. Prepare chicken
• In one bowl, beat eggs. In another, place cornstarch.
• Dip chicken pieces into egg, then dredge in cornstarch until well coated.
2. Fry chicken
• Heat about 2 inches of vegetable oil in a large pan or wok to 350°F (175°C).
• Fry chicken in batches until golden and crispy, about 4-5 minutes. Drain on paper towels.
3. Make orange sauce
• In a saucepan over medium heat, combine orange juice, sugar, rice vinegar, soy sauce, garlic, and ginger.
Bring to a simmer.
• Stir in cornstarch slurry and cook until sauce thickens and becomes glossy. Add chilli flakes.
4. Combine
• Toss fried chicken with the orange sauce until evenly coated.
5. Serve
• Garnish with sesame seeds and green onions.
Serve with steamed rice or chow mein.
For extra crispiness, double try the chicken (try once, let rest a few minutes, then fry again briefly before adding to the sauce).
