Ever try nduja (En-doo-ya)? Typically, it's a spicy, spreadable pork sausage from Italy made with meat from the trimmings from various meat cuts and fatback .... and today Chef Emily McCorkell has a plan for nduja ...

"Hi Everyone ... My kitchen staple today is nduja! I always try to keep a small pot of nduja in the back of my freezer and a package of pasta in the cupboard. Nduja is a spreadable salami. It’s spicy, rich, and melts beautifully into hot pasta.

For a quick dinner, add enough pasta for four to salted boiling water. Before draining, keep back a little pasta water. Return the pasta to the pan over a low heat, then stir through half a pot of nduja if you want it milder, or a full pot if you like heat.

This week I have double cream, so I’d add a splash to make a blush sauce. Usually I’d just grate through cheddar. Loosen with pasta water until glossy, then finish with tomato, basil or cheese.

"Yes Mark,

A tight week of weather, not a good day to be had all week and I don't mind admitting it - the weeds are getting the better of me - I can't get a string of days put together to get ground hoed to nip all the chickweed and redshank in the bud.

Pumpkin disasters
My pumpkins are shocking, terrible. With the miserable weather they're just sitting there sulking and slowly being nibbled to death by slugs....My only hope is for the weather to improve over the coming week/10 days to save the crop

Strawberries
The outdoor strawberries are starting to pick now (pic), and boy are they flavourful. Secret here it to pick them regularly before the birds see them :-)

Thalictrum
An absolutely gorgeous perennial flowering now in the garden, goes by the common name Meadow-Rue. Upright and blousy, great filler plant for between shrubs to bring an extra bit of colour to the garden. Pinks, Purples, Reds and whites.

March of the Robots
It's weather like this that proves the value of a robotic lawnmower - you don't have to worry about gaps in the rain to cut the grass.....or go the opposite and let the grass grow and just concentrate on cutting walkways through the long grass to enjoy the bees.

On TV this weekend....
~ Beechgrove. Ruth is on the tomatoes, early potatoes with George and young Callum is busy lifting and splitting hostas.
~ Gardeners World. Community Gardening, Self-seeding annuals, celebrating penstemons and Monty is busy adding colour to the Jewel Garden in Longmeadow.

Open Gardens
Glenalla House, Millford. Sat & Sun 10-5pm. Walled kitchen garden, wildflower meadows, special specimen tree collection, little pond and more. 5 Euro for charity

Open Farm Weekend
Lots going on here, plenty of opportunities to get out and about with the family, highlights from nearby:
