Vegan Kimchi — no shrimp paste, no fish sauce, no fuss!
You’ve had kimchi before, but this lazy version keeps all the flavour with zero seafood.
Simple, tangy, and totally addictive, everyone can make it at home!

🛒 Ingredients:
2 medium Chinese cabbage
1/2 cup salt (for salting)
1 medium apple
1 onion
5-7 cloves garlic
1 thumb-size piece of ginger
1 tbsp sugar
2 tbsp vinegar
1/2 tbsp mushroom seasoning (for umami)
2 tsp salt (for sauce)
1/2 cup Korean chili flakes (adjust to taste)
1 carrot (julienned)
1/3 small radish (julienned)
Handful of spring onions (or chives if you have them)

Massage, pack, ferment, and there’s vegan kimchi magic!

This is the secret to making every meal taste like comfort.
Simple, natural, and packed with umami 🍄

All you need:
🍄 Flat mushrooms & chestnut mushrooms (button & king oyster mushroom work perfectly too!)
🥕 Carrot, radish, onion
🍎 A few apple slices for gentle sweetness
Dried shiitake + seaweed for extra umami
🧂 A touch of salt (pink or black if you’ve got it)

Dry, blend, sift, and there you have it: pure umami magic in a jar.
Perfect for soups, stir-fries, marinades, or even sprinkled on chips! 😋

Everyone loves sweet potato fries, but they’re wasting it 😂
Here’s how we turn it into something more exciting, smoky, tangy, sweet, and spicy all at once.
This salad is light, fresh, and addictive, trust me, you’ll forget fries exist for a while.

📋 Ingredients:
3-4 medium-sized sweet potatoes (peeled & cubed)
2 tbsp olive oil
1 tbsp smoked chilli & lime paste (or paprika + salt + lime)
1/3 cucumber (chopped)
2 tomatoes (chopped)
1/2 onion (sliced)
1/2 cup chickpeas (cooked)
Fresh coriander to garnish

🥣 Dressing:
1 tsp chilli & lime paste
1 tbsp olive oil
1 tsp honey
Lime zest + juice
Adjust to your taste

Roast sweet potatoes till golden, toss with the dressing, add veggies, coriander, and you’ve got a warm, zesty salad bursting with flavour!

Vietnamese Chicken Sandwich (Bánh Mì Gà Nướng)
Juicy chicken thighs, smoky & savory sauce, crunchy veggies, all in one perfect bite.

Here’s what you need:
Chicken thighs
Garlic, onion powder, smoked chilli & lime paste (or paprika + salt)
Carrot, cucumber, pickled carrot & radish
Mayo + honey + chilli & lime paste (for the sauce)
Baguette or any crusty bread you can find

Crispy, tangy, spicy, no BBQ needed, just pure comfort.

The seaweed recipe every mum needs!
Forget pizza, my daughter calls this “crispy magic.”

Here’s how to make it:
- Tear 15g of nori (seaweed) into small pieces
- Blend into flakes
- Toast in a pan with:
▫️ 1 tbsp white sesame seeds
▫️ 1 tbsp black sesame seeds
▫️ 1 tsp sugar
▫️ ½ tsp mushroom seasoning
▫️ Pinch of salt
▫️ 1 tbsp sesame oil (plus a drizzle at the end)

Stir over low heat until fragrant, glossy, and crisp.
Cool and store in a jar, sprinkle on rice or mix into rice balls.
Kids love it, mums love it more! 😋

Tuna Mayo vs Vegan Kimbap - Which one wins? 😋

Two kimbap rolls, two totally different moods:
🥑 Vegan - fresh, light, and healthy.
🐟 Tuna mayo - creamy, rich, and addictive.

Both made from scratch, no rolling mat needed!

Here’s how I made them 👇
🍚 Rice base:
2 cups jasmine rice + ¼ cup sticky rice
Rinse clean, add water up to 1 finger joint (the golden rule)
Cook, then mix with salt, sesame oil & roasted sesame seeds

🥕 Fillings:
Pickled carrots: carrot + sugar + salt + vinegar
Cucumber: slice & remove seeds
Blanched spinach: season with salt, sesame oil & sesame seeds
Omelet: 2 eggs, salt, pepper, fry both sides, slice into strips
Pickled radish + seafood sticks

🥑 Vegan roll:
Add cucumber, spinach, pickled radish, carrot & avocado → roll tight → brush sesame oil → slice!

🐟 Tuna mayo roll:
Tuna + mayo + pepper → add with carrot, cucumber, omelet & radish → roll tight → brush oil → slice & enjoy!

Be creative with fillings, tofu, mushrooms, or kimchi work great too!

October Dish - Kimbap: Tuna Mayo or Vegan
I couldn’t decide… so I made both! Perfect for autumn lunchboxes or lazy weekend meals.

🥢 Here is all you need for classic Tuna Kimbap:
Roasted seaweed sheets
Cooked jasmine rice
Cucumber, carrot, yellow pickled radish
Omelet strips
Seafood stick
Tuna + mayo mix

🥢 And for Vegan Kimbap:
Roasted seaweed sheets
Cooked jasmine rice
Cucumber, carrot, yellow pickled radish
Blanched spinach
Avocado slices

✅ Brush the roll with sesame oil, slice, and enjoy with soy sauce or mayo with kimchi on the side!

When I was little in rural Vietnam, instant noodles were a luxury.
Now, living in the UK, Hao Hao is my comfort food, and I just used my last pack 😭
No fancy meals, just spicy Vietnamese noodles, childhood memories, and a quiet lunch while my daughter’s at school...
