I made this cake three months ago and only just found it 😅

I don’t use my baking kitchen much anymore, and it was hiding in the fridge I barely open. Don’t worry — I don’t make cakes for the public these days. This was never going out to anyone.

BUT… if you’ve ever worried about making a cake “too early” — look at this thing. Three months old and it still looked okay 👀 (I wouldn’t eat it, obviously)

So please stop stressing about making your cake the day before. A properly stored cake stays fresh for DAYS. I always used to make mine about 5 days ahead and they were absolutely fine.

This cake annoyed the entire internet and got me 8.5 million views so I made a song about it 🍰🌈

Two tiers. Rainbow sponge. Maximum tacky Y2K energy.

And apparently it was the illegal food colours from America that tipped people over the edge 🇺🇸

People lost their MINDS in the comments.

Babes, it was MY birthday cake. For ME. I ate it. I’m fine.

But the internet loves a controversy — and this one blew up across every platform.

8.5 million views. Thousands of comments. All because I wanted a bright rainbow sponge for my 35th 😂

I’ve been baking professionally for 14 years. I’ve seen trends come and go. But nothing gets engagement like making people slightly angry about food dye.

6 unhinged things I did when I started my home bakery 6.5 years ago 🍰😅

Starting a cake business from home isn’t always pretty. Here’s the chaos that built mine:

🩷 Went back to the office that made me redundant… and sold cakes to them. Embarrassing? Yes. Sold out immediately? Also yes.

🩷 Made fake orders just for content. One of those “fake” cakes ended up being my most requested design for an entire year. Every girl wanted it.

🩷 Baked until 4am most nights. Two toddlers meant daytime wasn’t always an option. Sleep was a luxury I couldn’t afford.

🩷 Bought 4 fridges for my tiny terraced house. My husband thought I’d lost the plot. We genuinely didn’t have the space. I made it work anyway.

🩷 Bought a Cricut machine when I was skint. Couldn’t really afford it. Made the money back in last-minute orders within the month.

🩷 When I finally admitted I needed help due to business growth I hired my vegan best mate who had NO experience. She could barely crack an egg. But she could handle my chaotic energy and daily meltdowns — and she became an incredible baker. Love you Nikita.

None of this was “the right way” to build a business.

But it got me to a sold-out home bakery, financial freedom, and actually being present for my kids.
