I Gareth Collins, have always had a great passion for cooking, over the years I have gained the knowledge of cooking Caribbean dishes from my family, with plenty of research and practise. Cooking has never been a chore for me, as I love getting creative and experimenting with all types of dish's. I remember in my younger days watching my Nan cook and being fascinated by her love for food. My other inspiration in the kitchen is my Auntie Sylvia, she works as a Chef at Russell’s Hall hospital and has decades experience in the industry. As well as giving me guidance with cooking authentic Caribbean food, she provides us with direction and support in the day to day running of the Caribbean Kitchen.
Lets go back to where we all started...
My family ran business (Webster's Brewhouse) had been searching for an hard working and enthusiastic Chef for a long time... little did they know they had one on there door step...
I’ve always wanted to test my cooking skills with a Caribbean buffet. With the right motivation and encouragement I finally made this happen. And as I had never come across a Caribbean Buffet before, I knew there was a space in the market for something like this.
On the 26th of January I held my first ‘Caribbean all you can eat buffet’. I had a lot of support from my friends and family. My mom Diane, my cousin Becky and my good friend Claire, who all supported me on the night. I asked Claire to provide me with vegan options for the buffet, knowing how knowledgeable and reliable she was. The buffet turned out to be a remarkable success more than we anticipated. We had an outstanding turn out, as we had all worked brilliantly together as a team.
Since this event we put on another two buffets, which followed the success from our previous event. From the buzz I created around the events it gave me the confidence to see how far I could take this. So I decided to challenge myself and grab the opportunity with both hands. With the support from a member of staff and a good friend - Pete Lambeth who encouraged me to pursue my passion in the cooking industry.
In the beginning of May I registered the business, after months of hard work and growth, we were extremely excited to host our grand opening event. We showcased our official Menu on the 5th of July which we were all very proud of.
Since then we have provided you with alternative specials each week, and family events. We also take great pride in our customer service. Part of our great customer service revolves around you, the customer being our main priority. We are all very passionate to provide you with an exceptional service, accompanied with the tastiest dishes we can create.
We are constantly finding new ways to improve our menu and all other aspects of the business. We are open to receiving all types of feedback, whether its good, or constructive criticism. All your opinions are important to us, so please don't hesitate in contacting us, with your feedback, as it is vital in promoting the growth and improvements of the business.
