The algorithm sent me this gift of a plate from Nick “Heatstroke” Keith and it didn’t disappoint!

Pork collar in a sweet sticky Asian marmalade glaze and slaw with mandarins and more Asian flavours.

This was incredible and requires a massive shout out to Nick “Heatstroke” Keith because without doubt I’ll be smashing this again!!!

Saw an ad for New York Bakery potato rolls the other day and knew I had the get on the case.

Grabbed a couple of Three Trees Farm Shop & Cafe 6oz “lone star” brisket burgers (seasoned with Tubby Tom lone star) and slapped them in the buns with all the classic accoutrements - iceberg, tomato, onion, pickle, ketchup & mustard and a melty slice of cheese and that was me done.

Thoroughly happy with the outcome.

TUESDAY SANDO SESSIONS - THE CONTINENTAL.

After went jollying around Austria recently this weeks Sando was all her. Homemade pretzel buns (which apparently looked like 💩s) filled with mayo, smoked Bavarian cheese, German salami and smoked German ham (and mine had pickles)

She said it was “not mind blowing but satisfying” where as I thought it was deliciously delicious.

Definitely a winner in my book, especially seeing as I did nothing except eat it!!

BRISKET CHILLI JACKIE T

The perks of having to test cook briskets is you get plenty of leftovers! Todays were diced up and thrown into a chilli with plenty of spices, chipotles in adobe and heaped on top of a buttery jacket potato.

Proper old school food elevated.

BRISKETS

Been practicing my briskets the last few weeks doing a couple of 5kg whole briskets and it’s been fascinating..

Brisket 1 was cooked on the Masterbuilt - Europe 560 with Weber Grills - UK & IRELAND briquettes and post oak chunks in the hopper. This one I let go a few degrees over what I wanted and then rested in the YETI and proceeded to overcook it even further. The seasoning was good and the flavour was mega.

Brisket 2 was also cooked on the 560 but being as I decided to cook it at 9pm for the next day it was a little rushed. Fuelled by Slate Hill Charcoal Co. with oak chips through the hopper the flavour was great but I did burn out of coal for an hour during the night which wasn’t ideal. I could’ve also done with trimming a little more fat off the cap of this one.

I think I’ve got it dialled now with seasoning and fuels etc and also with my temps to cook and rest to. Let’s hope so cos in 2 weeks I’m smoking for 80 people 🤣🤣🤣

TUESDAY SANDO SESSIONS: THE RACHEL

While researching the next Texas trip Mum Foods Smokehouse & Delicatessen | Austin, Texas came across my radar, specifically, their Rachel sandwich. This is my take.

Toasted bread, sliced and griddled pastrami, melted Swiss cheese and coleslaw for crunch with lashings of Rachel sauce top and bottom.

Well received by and myself and definitely worth the mess!!

RIBS N CHIPS

Smoked up a couple of racks of ribs on the Masterbuilt - Europe 560 for tea. Simple rub of salt and pepper before glazing halfway thru with Gurt Sauces habanero chilli syrup. Then finished with a bbq sauce loaded with more have syrup to bring some sweet heat.

Bloody happy with these, still had a good bite to them but nicely tender.

I can’t take the credit for tea tonight, my contribution was the “caramelised” garlic bread not pictured… however smashed it out of the park scratch making 95% of everything pictured. Homemade dough and sauce, 2 types of cheese and one pie with pepperoni, onion, GingerBeard's Preserves candied jalapeños and homemade hot honey and the second pie with piri piri chicken, onion and piquante peppers.

CHILLI FEAST

Smashed some Dino's Famous chilli dogs into some M&S Food rolls again this time with a simple chilli, mustard, pickles and crispy onions.

Served it up with some waffle fries smothered in chilli, cheese and sauces.
