Easy to make, easy to store and even easier to adapt as you can use most fruits and any syrup.

The syrup is equal quantities sugar and water, reduced by half.

I've flavoured mine with Hibiscus, which was easy to get at a popular supermarket...the green one if you must know.

But you can use any fruit or flavours you wish, or even easier, use honey or maple syrup.

If your kitchen is constantly having to react to allergies, it's your kitchen that's the problem, not the customers.

Poor menu management, poor training, and failing to adapt to the current eating habits are the chefs fault.

If you constantly behind because your kitchen is reactive rather than proactive, thats not excuse to risk someone health, or come on tiktok to bitch about it.

Just do you job chef.

Maturing as a chef is realising no matter how good you think you are, someone's at cooking the most incredible food, for just a few loved ones. You're not beating that.

It should been obvious really. Everything I grew up eating and actually enjoy were "adapted" from abroad.

Spag Bol, Coronation Chicken, Chilli con carne, now sticky toffee pudding too πŸ˜…

Today I documented the installation of one of the most unique restaurant signs in Derbyshire.

An old American Cadillac, transformed into a full diner sign, lifted into place by crane for the 50s diner in Swadlincote.

A proper statement piece and something you do not see every day, and one you will definitely not forget.

Really good seeing local businesses investing in creating something memorable instead of generic.
