ONE WEEK OF EASY FAMILY DINNER IDEAS 🫶🏼

Save this for the next time you’re staring into the fridge wondering what on earth to make for dinner 😂

7 easy dinner ideas that are perfect for busy weeknights and ofc taste REALLY good 🤌🏼

This week’s dinners include:

Chicken & Pepperoni Lasagne
Garlic Parmesan Chicken Pasta
Chicken Chow Mein
Pulled BBQ Chicken Sliders
One Pan Creamy Cajun Chicken
Smashed Chicken Tacos
One Pan Chorizo Orzo

💸 BUDGET TIP:A lot of these recipes are chicken based, so buy a large whole chicken, roast it at the start of the week and portion the meat out to use across different meals. It’s much cheaper than buying individual packs of chicken and makes dinners even quicker too 🙌🏼

One Pan Chorizo Orzo 🤌🏼

20 minutes, one pan, minimal mess & minimal clean up… exactly my kind of dinner 🙌

If you’re someone who thinks you don’t have time to cook from scratch, SAVE this one because it’s easy peasy. Creamy, packed with flavour and on the table in 20 minutes!

Ingredients:
150g chorizo
1 red onion
1 red pepper
2 garlic cloves
1 tsp paprika
1 tsp dried oregano
1 tbsp tomato purée
250g orzo
Approx 600ml chicken broth (chicken stock works too)
100ml single cream
40g parmesan
Black pepper

Method:
1. Add the chorizo to a large frying pan over a medium heat and cook for 3–4 minutes until golden and crispy. Remove around a quarter of the crispy chorizo and set aside for topping later, leaving all that lovely chorizo oil in the pan.

2. Add the red onion and red pepper and cook for 4–5 minutes until softened.

3. Add the garlic, paprika and oregano and stir through.

4. Add the tomato purée and cook it off for around a minute before stirring in the orzo.

5. Pour in the chicken broth, stir well and bring to a gentle simmer. Cook uncovered for around 8–10 minutes, stirring regularly so the orzo doesn’t stick. Add an extra splash of broth if needed.

6. When the orzo is almost cooked, stir through the cream and cook for another 2–3 minutes until beautifully creamy.

7. Take off the heat and stir through the Parmesan and a good crack of black pepper.

8. Finish with the reserved crispy chorizo and obvs a little extra Parmesan 😋

And that’s it! A ridiculously easy family dinner with only one pan to wash up. You can thank me later 😉
