🧡 Gluten-Free Carrot Cupcakes 🧡
My Dad requested a carrot cake for his birthday this year so I went on a hunt for a good GF recipe (I'd never made a carrot cake before, let alone GF 😅) so I turned to ! Her carrot cake recipe can be found online 🤓 and it's fantastic!
Off the back of the birthday cake success I decided to try and make some cupcakes using the same recipe but this time without the walnut pieces within the sponge of the cake. I was worried at first that this might mess with the texture but it did not 😊
My husband's verdict was that this is the best cake I've ever made. Not the best gluten-free cake - the best cake, full stop. He's eaten plenty of both gluten and gluten-free cakes over the years, and he said if this was entered into a carrot cake competition against regular cakes, it would hold its own.
It's soft, beautifully moist, packed with flavour, and doesn't have any of the dryness people often associate with gluten-free baking.
If you're looking for a gluten-free carrot cake recipe, I can wholeheartedly recommend Katarina's version. I'll definitely be making these again! 🥕🧁
