Pioneer Woman Fruitcake Cookies
These classic fruitcake cookies are rich, chewy, and packed with dried fruit and nuts — a holiday favorite made simple and irresistible.
Ingredients:
• 2 cups mixed dried fruit (raisins, cranberries, chopped dates)
• 1 cup chopped nuts (walnuts or pecans)
• 1 cup unsalted butter, softened
• 1 cup brown sugar, packed
• 1 cup granulated sugar
• 2 large eggs
• 1 tsp vanilla extract
• 2 cups all-purpose flour
• 1 tsp baking soda
• ½ tsp salt
Directions:
Cream butter with both sugars until light and fluffy. Beat in eggs and vanilla. In a separate bowl, mix flour, baking soda, and salt. Gradually add dry ingredients to the butter mixture. Fold in dried fruit and nuts. Drop spoonfuls onto a lined baking sheet. Bake at 350°F (175°C) for 10–12 minutes until lightly golden. Cool before serving.
