🎌 What if a single restaurant could take you on a journey from Bali to Japan in just one bite?

In the heart of Nusa Dua, S**I brings this union to life, even in its name, with s**i meaning “one” in Balinese and shiki meaning “four seasons” in Japanese. Led by Chef Owner Vincent Hiew, S**I blends global influences into a menu that is both refined and inventive.

Diners can savour timeless favourites like sashimi, nigiri and maki, or, for the full experience, explore the Chef’s Tasting Menus, each thoughtfully curated to showcase S**I’s signature creations and crowd favourites. Highlights include Gindara Caramelised Miso, Balinese Maguro Tartare and Octopus with Smoked Paprika Aioli.

Among them, Tri Taluh is a must‑try. A sous‑vide omega egg yolk nestled in toasted brioche, topped with ikura and caviar, delivers a burst of creamy, savoury and umami flavours. With its unique offerings and standout cocktails, this is set to be Bali’s next must‑visit culinary destination. **I **IBali

Through their collaboration with Magi Farm, Merusaka Nusa Dua proudly receives a certificate of appreciation, recognising their commitment to responsible food waste management. This achievement reflects the resort’s dedication to sustainability and fostering a greener future for Bali.

Since the beginning of the partnership, the resort has adopted innovative Black Soldier Fly bioconversion technology — a natural solution to process food waste from dining outlets, including breakfast service. These maggots consume twice their weight in organic waste daily, producing nutrient-rich pellets that nourish the resort’s gardens, closing the loop between waste reduction and environmental care.

With 50 maggot boxes in rotation, over 27,000 kilograms of food waste have been processed in a year, reducing landfill use and methane emissions. The resort’s team maintains the farm, while Magi Farm manages breeding and processing.

Did you know Bali and China share a deep cultural history? 🪙

One symbol of this connection is p*s bolong, or uang kepeng, ancient Chinese coins with square holes and sacred inscriptions.

Once used as currency during the Majapahit era, these coins now hold spiritual significance in Balinese Hindu rituals. Crafted from three (tri datu) or five (panca datu) metals, each element represents a deity. Immune to cuntaka (ritual impurity), they are revered as pinaka suteja, meaning bearer of divine radiance.

Used in offerings like banten and kwangen or given as sesari (monetary offerings), uang kepeng are essential to Balinese ceremonies. Read the full story on: https://www.nowbali.co.id/p*s-bolong-cultural-ties-between-china-and-bali/

Simultaneously unsightly and visually impressive, gayah are elaborate offerings made from the meat, skin, and parts of butchered pigs. Despite Bali’s humid, tropical heat being far from ideal for displaying animal remains, gayah are essential during major ceremonies like funerals and odalan temple anniversaries.

These offerings play a vital role in the mecaru ritual, meant to cleanse negative energy and restore cosmic balance. As pork symbolises negativity, pigs are seen as ideal mediums to appease the bhuta kala, earthly, demonic forces believed to disrupt harmony if left unaddressed.

Crafted with remarkable creativity, gayah range from the simple gayah sari, with meat skewers on a coconut base, to the grand gayah agung, a 4-foot tall structure.
