The Golden Garlic Crumbs:
✅️¾ cup fresh breadcrumbs (Panko is perfect!)
✅️2 tbsp butter & 2 cloves grated garlic

➡️Build the Base: Crisp the diced bacon in a pan, then set aside. In the same pan, sauté the onions, carrots, mushrooms, and garlic. Stir in the tomato paste, paprika, thyme, Worcestershire, and mustard to create a fragrant base.
➡️Slow Cook: Transfer the veggie mixture and the whole chicken thighs to your slow cooker. Pour in the chicken stock and season.
➡️LOW: 6–8 hours | HIGH: 3–4 hours.
➡️The Creamy Finish: Remove the chicken, shred it, and return it to the pot. Stir in the sour cream. (If you want it thicker, stir in a cornflour slurry). Add the bacon back in and cook for a final 15–20 minutes on HIGH.
