The Softest Brioche You’ll Ever Make • Bake With Me

This brioche is incredibly soft, rich, and fluffy — made with a simple dough that transforms beautifully. Watch the process step by step and bake along with me.

📌 Ingredients:

* 550g flour
* 100g sugar
* 6g salt
* 25g fresh yeast (or 6g dry yeast)
* 250 ml milk
* 5 eggs
* 150g butter

📌 Method:

1. Mix all ingredients and knead until you get a smooth, elastic dough.
2. Cover and let it rise until it doubles in size.
3. Shape the dough as desired.
4. Let it rise again until doubled.
5. Bake at **165°C (329°F)** for **45 minutes**.

The result? A soft, airy brioche that melts in your mouth.

In this video, I show you how to make soft, lightly sweet buns with a beautiful texture, perfect for Easter or any time you crave homemade comfort baking. These chocolate-filled buns can be made with sourdough starter or yeast and are left to rise slowly for better flavor and texture.

I originally created this page back when I started a food truck business selling handmade burgers. That adventure didn’t move at the pace I dreamed of, but it taught me a lot.

What stayed with me, stronger than ever, was my love for cooking and sharing recipes.

I’ve been creating content online for many years – with over 2,000 home-tested recipes shared and loved by people all around the world. Simple food, full of soul.

This page is now my way of sharing that inspiration with you, in English, from my kitchen in Ireland.
