“Festival cooking strips away all the comfortable infrastructure of a permanent kitchen and forces you to be really decisive about what matters — what’s the one bite, the one flavour, the one moment you want someone to carry home? That constraint is actually where creativity lives. For IBILE, it’s also an opportunity to introduce people to West African food who might never have walked into a tasting menu restaurant. The festival format democratises that access, and I find that exciting rather than daunting….. Come hungry, come curious.”

Ahead of this year’s much anticipated festival, we catch up with owner of West African restaurant as he gets ready to dish up a taste of West African cultures as part of this year’s festival in Glendalough Co. Wicklow.

Irish born, Texas raised, drummer is on a mission, a quest to celebrate the under-appreciated nuggets of the post/hard bop era of jazz which, in its heyday – and its most commercial – was selling lots of records before whippersnappers like Elvis and The Beatles changed the course of popular music forever.

He heads up a new quintet called that aims to strengthen the burgeoning Dublin Jazz scene’s love of soulful grooves. We spoke to him ahead of a series of summer gigs kicking off this evening, then on June 30th and presented by on July 30th.

“I’m not about to attempt a potted history but I think that we might be approaching some kind of inflection point when it comes to noodles. I’m talking about instant noodles. Ramen (and Korean ramyun in particular) now seems to rule over certain corners of the internet because the kids have ‘discovered’ them, not in the course of feeding themselves, but in their feeds. Our ongoing project to replace human curiosity and discovery with an infernally closed loop of algorithmic prediction means that food trends now seem to be matters of automatic imposition. If you like this then you may also like – to submit to a life of perpetual insatiability. Welcome to the age of noodle influencers, of ramen-maxxing. That’s the first and only time that I will use that odious suffix.”

Filmmaker and Director of Photography
is an emerging Irish talent worth watching. Originally from our hometown of Dublin, Ireland, Byrne has steadily built a reputation as one of a new generation of image-makers navigating fashion film, documentary, narrative cinema and commercial work.

While many cinematographers establish themselves within a single visual world, Byrne’s work moves comfortably between intimate documentary storytelling, experimental fashion imagery and culturally focused short-form cinema.

For Irish cinema, that global movement matters. Filmmakers like Byrne are helping position a new generation of Irish visual artists not simply as contributors to major productions, but as creative voices.
