Sundays are always a great baking day, when you’ve time to make something delicious to enjoy after dinner or as a teatime treat. There are 3 reasons why I bake this cake so often:
🍏It’s super easy & quick
🍎Guests love it
🍏All our apples are coming into season now

INGREDIENTS:
220g caster sugar
110g ground almonds
110g self-raising flour
1tsp baking powder
2-3 sharp tasting / cooking apples, peeled & sliced (I use Bramley)
140g butter, melted
3 free range eggs, whisked
Good handful flaked almonds
Icing sugar to decorate

METHOD:
1. Butter sides and bottom of a loose base 22cm cake tin then line base with circle of baking parchment. Preheat oven to 150C
2 Place the sugar, almonds, flour and baking powder in a large bowl and combine using a whisk.
3, Add melted butter and whisked eggs to the dry mix and combine fully.
4. Spread half of mix on base, add a layer of sliced apples then spread remaining half on top. Sprinkle all over with flaked almonds.
5. Place in preheated oven and bake for 55-60 minutes. Check with skewer to make sure it is cooked. Cool in tin for 5 minutes before removing and sifting icing sugar over. Eat warm with cream or ice cream but it is also great cold the next day (if you’ve any left!!)
