Kerala Tapioca Fry Recipe👇

Thalassery Style Kappa Porichathu | തലശ്ശേരി കപ്പ പൊരിച്ചത്

This is a popular malabar style tea time snack especially from Thalassery. And this variety of Tapioca is grown in thalassery. You can make this snack with the regular tapioca as well. You can cut into small pieces, dip in batter and deep fry them.

Ingredients:
Tapioca - 1 big piece
Gram Flour - 1 cup
Rice Flour - 2 tbsp
Turmeric Powder - 1/4 tsp
Red Chilli Powder - 1 tbsp
Asafoetida - 1/4 tsp
Salt - as per taste
Black Sesame Seeds - 1 tsp
Curry Leaves - 2 sprigs
Water - to make the paste
Oil for frying

Preparation:
Clean and cut the tapioca into long and thin slices. You can also cut into small pieces.
Put these slices into hot water for 15 minutes. Add salt to this water and mix well.
Make a batter using gram flour, rice flour, turmeric, chilli powder, asafoetida and salt. Add water gradually and make a semi thick batter. Add black sesame seeds and chopped curry leaves and mix.
Coat the tapioca slices with this batter and deep fry on a medium flame until crisp and golden brown.
Enjoy with hot tea!!

Kerala Style Chicken Cutlet Recipe👇

This recipe makes 8 cutlets

Ingredients:
Oil - 3 tbsp
Chopped Onion - 2 Big
Ginger Garlic Paste - 1 tbsp
Chopped Green Chilli - 4 to 5
Salt - 3/4 tsp
Turmeric Powder - 1/2 tsp
Red Chilli Powder - 1 tsp
Fennel powder - 1/2 tsp
Black Pepper powder - 3/4 tsp
Garam Masala - 3/4 tsp
Chopped Coriander leaves - 1/2 cup
Chopped Curry Leaves - 1/2 cup
Water - 2 tbsp
Boiled Potato - 2 medium
Boneless Chicken (Minced) - 200 gm
Egg - 1
Breadcrumbs - 1/2 cup
Oil for frying

Preparation:
Pressure cook potatoes with salt, turmeric, water for 3 to 4 whistles. Peel mash and keep aside.
To make minced chicken, pressure cook boneless chicken with some salt, turmeric, black pepper powder, fennel powder and water for 2 to 3 whistles. Add cooked chicken to a mixer jar and churn to make minced chicken.
Heat oil in a pan. Add ginger garlic paste and fry until raw smell is gone.
Add chopped onions, chopped green chillies, little salt and fry until it turns soft and slightly changes colour.
Add all the powders and saute.
Add coriander and curry leaves and saute for a minute.
Add minced chicken, mashed potato to this and combine everything really well.
Check salt at this stage and add some if needed.
Take small portions of this mixture and make patties. Dip in beaten egg and coat with breadcrumbs.
Heat oil in a separate pan and shallow fry the patties on a medium flame until golden brown on both the sides. Remove on to a kitchen towel to drain out excess oil.
Your chicken cutlets are ready!!!

Ingredients:
Prawns - 250 gms
Turmeric Powder - 1/4 tsp
Chilli Powder - 2 tsp
Fennel Powder - 1 tsp
Ginger Garlic Paste - 1 tsp
Salt - to taste
Garam Masala - 1/2 tsp
Water
Coconut Oil - for frying

Preparation:

Make a marinade with all the ingredients listed above.
Marinate the prawns with this and set aside for 20 minutes.
Heat coconut oil in a pan.
Fry the prawns on medium flame until crisp and golden brown.

Kerala Mackerel Fry Recipe👇

Ingredients:
Turmeric Powder - 1/4 tsp
Red Chilli Powder - 2 tsp
Fennel Powder - 1 tsp
Black Pepper Powder - 1/2 tsp
Ginger Garlic Paste - 1 tbsp
Salt - to taste
Water
Oil for frying

Preparation:
Clean fish and make slits on both sides.
Marinate the fish with the ingredients listed above and set aside for 20 minutes.
Heat oil in a pan. Place the fish pieces.
Fry on medium flame until crisp on both the sides.
