Certainly! Here’s the Raja Sankranti Special Millet Khira Poda Pitha recipe made without ragi (finger millet), and instead using other nutritious and light millets like foxtail millet, little millet , or barnyard millet .

🌾 ରଜ ବିଶେଷ ମିଲେଟ୍ ଖିରା ପୋଡା ପିଠା (Without Ragi)
🔸 Serves: 6–8 | Prep Time: 30 mins | Cook Time: 1 hour.

Main Ingredients:
• Foxtail millet (Kangu) or Little millet (Sama) – 1 cup (soaked for 4 hrs, then ground to a coarse paste or powdered)
• Grated coconut – ½ cup
• Crumbled chhena or soft paneer – ½ cup (optional, for richness)
• Full cream milk – 2 cups
• Jaggery (grated) – ¾ cup or as per taste
• Cardamom powder – ½ tsp
• Salt – a pinch
• Crushed black pepper – ½ tsp (optional, gives a traditional flavor)
• Chopped dry fruits (cashew, raisins, almonds) – 2–3 tbsp
• Ghee – 1 tbsp (for greasing)
(Preparation Steps):
1. Soak the millet (sama/kangu) for 4 hours, then either grind it to a coarse paste or dry it and make powder (you can also use ready-made millet flour).
2. In a heavy-bottom pan, boil the milk and simmer until it reduces slightly.
3. Add grated jaggery to warm milk. Stir until fully dissolved. Let it cool slightly.
4. Add the millet paste/flour to the milk-jaggery mix. Mix well ensuring no lumps.
5. Now add grated coconut, chhena (if using), cardamom powder, salt, and black pepper. Mix to get a thick batter.
6. Add chopped dry fruits and gently fold in.

(Baking Method):
Traditional Clay Style
• Grease a steel bowl or earthen vessel with ghee.
• Pour the batter and cover with banana leaf or lid.
• Place on low flame or inside a chulha/tandoor and cook for 45 mins–1 hr until firm and golden crust forms.
(Serving Suggestion):
• Let the pitha cool completely before slicing.
• Perfect for Raja prasad or evening snacks!

“ଆମ୍ବ ବିରି ଲଡୁ” !!!

Here is a traditional Odia Amba Biri Ladoo (ଆମ୍ବ ବିରି ଲଡୁ) recipe — a unique and flavorful sweet made with ripe mango pulp (amba) and black gram (biri). This is a lesser-known delicacy enjoyed especially during mango season in Odisha.

🌼 Amba Biri Ladoo Recipe (Odia Mango-Black Gram Sweet Balls)

📝 Ingredients:
• Ripe mango pulp – 1 cup (preferably sweet & fibrous varieties like Baiganapalli or Malda)
• Biri (black gram without skin) – 1 cup
• Jaggery or sugar – ½ cup (adjust to taste)
• Cardamom powder – ½ tsp
• Ghee – 3 tbsp


🍳 Preparation Steps:
1. Wash & Roast Biri:
• Wash urad daal ( biri dali) .
• Drain and roast the soaked biri in a dry pan on low flame until it turns golden and aromatic.
• Let it cool, then grind into a coarse powder.
2. Prepare Mango Mix:
• In a thick-bottomed pan, heat 2 tbsp ghee.
• Add the mango pulp and stir on medium flame till it thickens and the raw smell disappears.
3. Combine Ingredients:
• Add jaggery (or sugar) to the mango pulp and stir until it dissolves completely.
• Mix in the cardamom powder .
• Add the roasted biri powder slowly, stirring continuously to avoid lumps.
4. Cook & Shape:
• Cook the mixture until it leaves the sides of the pan and forms a sticky mass.
• Let it cool slightly. Grease your palms with ghee and shape into small round ladoos.
5. Serve or Store:
• Let the ladoos cool completely. Store in an airtight container. Consume within 2–3 days.

📌 Tips:
• For better flavor, use naturally ripe sweet mangoes.
• You can dry roast biri dal instead of soaking if you’re short on time, but soaking enhances digestion.
• Add chopped nuts or dry fruits if desired.
