Certainly! Here’s the Raja Sankranti Special Millet Khira Poda Pitha recipe made without ragi (finger millet), and instead using other nutritious and light millets like foxtail millet, little millet , or barnyard millet .
🌾 ରଜ ବିଶେଷ ମିଲେଟ୍ ଖିରା ପୋଡା ପିଠା (Without Ragi)
🔸 Serves: 6–8 | Prep Time: 30 mins | Cook Time: 1 hour.
Main Ingredients:
• Foxtail millet (Kangu) or Little millet (Sama) – 1 cup (soaked for 4 hrs, then ground to a coarse paste or powdered)
• Grated coconut – ½ cup
• Crumbled chhena or soft paneer – ½ cup (optional, for richness)
• Full cream milk – 2 cups
• Jaggery (grated) – ¾ cup or as per taste
• Cardamom powder – ½ tsp
• Salt – a pinch
• Crushed black pepper – ½ tsp (optional, gives a traditional flavor)
• Chopped dry fruits (cashew, raisins, almonds) – 2–3 tbsp
• Ghee – 1 tbsp (for greasing)
(Preparation Steps):
1. Soak the millet (sama/kangu) for 4 hours, then either grind it to a coarse paste or dry it and make powder (you can also use ready-made millet flour).
2. In a heavy-bottom pan, boil the milk and simmer until it reduces slightly.
3. Add grated jaggery to warm milk. Stir until fully dissolved. Let it cool slightly.
4. Add the millet paste/flour to the milk-jaggery mix. Mix well ensuring no lumps.
5. Now add grated coconut, chhena (if using), cardamom powder, salt, and black pepper. Mix to get a thick batter.
6. Add chopped dry fruits and gently fold in.
(Baking Method):
Traditional Clay Style
• Grease a steel bowl or earthen vessel with ghee.
• Pour the batter and cover with banana leaf or lid.
• Place on low flame or inside a chulha/tandoor and cook for 45 mins–1 hr until firm and golden crust forms.
(Serving Suggestion):
• Let the pitha cool completely before slicing.
• Perfect for Raja prasad or evening snacks!
