Mutton Kosha Recipe:-
Mutton 1 kg
Salt 2 tsp
Turmeric powder 1/2 tsp
Red chili powder 1 tsp
Mustard oil 2 tbsp
Lemon juice 1 tbsp
Curd 1 cup, well beaten
Ginger paste 1.5 tbsp
Garlic paste 1.5 tbsp
Fried onion (birista) 1/2 cup, crushed
Mix everything well
Cover and marinate for at least 4 hours or overnight in the fridge
Mustard oil 5 tbsp
Bay leaves 2
Cinnamon stick 1 inch
Cloves 4
Green cardamom 3
Black cardamom 1
Dry red chilies 2
Onions 2 large, finely sliced
Ginger paste 1 tbsp
Garlic paste 1 tbsp
Tomatoes 2 medium, chopped
Green chilies 2, slit
Coriander powder 2 tsp
Cumin powder 1 tsp
Red chili powder 1 tsp
Garam masala powder 1 tsp
Sugar 1 tsp
Salt to taste
Heat mustard oil until smoking
Add bay leaves, cinnamon, cardamom, cloves, black cardamom, and dry red chilies
Sauté for 30 seconds
Add sliced onions
Fry on medium heat until deep golden
Add ginger garlic paste
Sauté for 2 min until raw smell goes away
Add chopped tomatoes and green chilies
Cook until soft and oil separates
Add coriander powder, cumin, chili powder, salt, sugar
Mix and roast masala for 3–4 min
Add marinated mutton with all marinade
Cook on medium-high heat for 10–12 min, stirring frequently until oil starts to separate
Lower flame
Cover and cook on low heat for 40–50 min, stirring every 5–7 min
Water 1 to 1.5 cups (as needed for thick gravy)
Add and simmer until mutton is tender (or pressure cook for 3–4 whistles if needed)
Finish with garam masala and a spoon of ghee (optional)
Simmer for final 5 min uncovered
