Cabbage Fat-burning Soup
Ingredients:
- 1 large onion, chopped
- 2 large carrots, sliced
- 3 celery stalks, chopped
- 2 bell peppers (any color), chopped
- 1 medium head of cabbage, chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth
- 1-2 cloves garlic, minced
- Salt and pepper to taste
- Optional: herbs like thyme or basil for extra flavor
Instructions:
1. Sautรฉ Vegetables: In a large pot, heat a little oil over medium heat. Add the chopped onion, carrots, and celery. Sautรฉ for about 5-7 minutes until the vegetables are softened.
2. Add Remaining Ingredients: Stir in the bell peppers, chopped cabbage, diced tomatoes (with their juice), vegetable broth, and minced garlic. If youโre using herbs, add them now. Season with salt and pepper to taste.
3. Simmer the Soup: Bring the mixture to a boil, then reduce the heat and let it simmer for about 30-40 minutes, or until the vegetables are tender.
4. Taste and Adjust: Taste the soup and adjust the seasoning if needed. You can add more salt, pepper, or herbs according to your preference.
