RECIPE FOR MOOLI KI THECHUANI/ MOOLI KA SAAG :
INGREDIENTS :
• 400 GM RADISH (MOOLI)
• 2 TOMATOES (MEDIUM)
• 3-4 GARLIC CLOVES
• 4 GREEN CHILLIES
• 1/2 TSP CUMIN SEEDS (JEERA)
• 2 TBSP GRAM FLOUR (BESAN)
• 1/2 TSP JAKHYA SEEDS (WILD MUSTARD)
• 1/2 TSP CHILLI POWDER
• 1 TSP CORIANDER POWDER
• 1/2 TSP TURMERIC POWDER
• 2TBSP OIL
• SALT TO TASTE
• 500 ML WATER
DIRECTIONS :
1. WASH AND PEEL THE RADISHES.
2. ON A SIL/GRINDING STONE, ADD THE GREEN CHILLIES, GARLIC CLOVES AND THE CUMIN SEEDS. MASH THEM TO A PASTE.
3. ROUGHLY SLICE THE RADISHES. AND START MASHING THEM ON THE SIL/GRINDING STONE ALONG WITH SALT. DO NOT MASH TOO HARD.
4. SLICE THE TOMATOES AND ADD TO THE MASHED RADISHES AND KEEP ASIDE.
5. HEAT OIL AND ADD JAKHYA SEEDS UNTIL THEY POP. ADD THE RADISHES AND TOMATOES TO IT AND STIR FOR A WHILE.
6. ADD CHILLI POWDER, CORIANDER POWDER, TURMERIC POWDER AND SALT TO TASTE. AND MIX.
7. ADD 100ML AND LET IT COOK FOR ATLEAST 10-15 MINUTES ON MEDIUM FLAME OR UNTIL THE RADISHES GET SOFT.
8. IN A BOWL, TAKE GRAM FLOUR AND ADD 50 ML WATER TO MIX IT AND FORM A WET PASTE.
9. ADD THIS PASTE TO THE GRAVY. AND AGAIN MIX.
10. NOW FINALLY ADD 350 ML WATER TO IT AND LET IT COME TO A BOIL.
11. STIR ONCE MORE AND GARNISH WITH CHOPPED CORIANDER.
12. SERVE WITH RICE AND SOME PICKLE.
