Chole Masala Recipe
Ingredients:
1 cup chickpeas (chole) – soaked overnight
2 medium onions – finely chopped
2 medium tomatoes – pureed
2 green chilies – slit
1 tbsp ginger-garlic paste
2 tbsp oil or ghee
1 bay leaf
1 black cardamom
1 inch cinnamon stick
2–3 cloves
1 tsp cumin seeds
1 tsp turmeric powder
2 tsp coriander powder
1 tsp red chili powder
1 tsp garam masala
1 tsp chole masala (optional but recommended)
Salt to taste
Fresh coriander leaves – chopped (for garnish)
Lemon wedges (for serving)
Method:
1. Cook Chickpeas
Pressure cook the soaked chickpeas with 3 cups of water and a little salt until soft (4–5 whistles). Keep aside.
2. Make Masala Base
Heat oil in a pan, add cumin seeds, bay leaf, black cardamom, cinnamon, and cloves.
Add onions and sauté till golden brown.
Add ginger-garlic paste and green chilies, cook for 1 min.
Add tomato puree and cook till oil separates.
3. Add Spices
Add turmeric, coriander powder, red chili powder, and chole masala. Cook for 2–3 mins.
4. Combine with Chickpeas
Add the cooked chickpeas along with water from the cooker. Mix well.
Simmer on low flame for 15–20 minutes until thick and flavorful.
5. Finish
Add garam masala, mix, and switch off the flame.
Garnish with fresh coriander and a squeeze of lemon.
