Crispy Chicken (or Beef) Cheese Wrap
Ingredients (makes 2 wraps)

Wraps & filling

2 large flour tortillas (10–12 inch)

1–1½ cups cooked chicken or beef, shredded or chopped
(leftover roast chicken works great)

1 cup mozzarella or cheddar (or mix)

1 small onion, thinly sliced (optional)

1 small tomato, sliced or diced (optional)

1 cup lettuce (for crunch after toasting)

2–3 tbsp mayonnaise or garlic sauce

1–2 tbsp ketchup or chili sauce (optional)

Seasoning for meat

½ tsp salt

½ tsp black pepper

½ tsp paprika or chili powder

½ tsp garlic powder

½ tsp cumin (optional)

1 tbsp oil/butter for toasting

Step-by-step
1) Season & heat the meat

If your meat is already cooked, just warm it in a pan with 1 tsp oil.

Add salt, pepper, paprika, garlic powder, and cumin.

Stir 2–3 minutes until hot and flavorful. Set aside.

2) Assemble the wraps

Lay tortilla flat.

Spread mayo/garlic sauce on one half.

Add cheese first (this helps “glue” it).

Add seasoned meat, onions/tomatoes if using.

Add a little more cheese on top.

Fold tortilla into a half-moon.

3) Toast until golden

Heat a nonstick pan on medium.

Add a little butter or oil.

Place wrap in pan and press lightly.

Toast 2–3 mins per side until deep golden and crispy, cheese melted.
(Flip carefully.)

4) Add lettuce & serve

Open the wrap slightly and tuck in lettuce (keeps it fresh and crunchy).

Slice into halves like the photo.

Serve hot with chili sauce or ketchup.

Tips for the perfect crispy wrap

Medium heat is best: high heat burns before cheese melts.

Cheese on both sides of meat = better melt + holds filling.

Add lettuce after toasting so it stays crisp.

Instructions

1. Prep

Preheat your oven to 350°F (180°C).

Line a baking sheet with parchment paper.

2. Mix Wet Ingredients

2 tbsp vinegar (white or apple cider)

1½ tbsp olive oil (or any oil)

½ tsp salt (adjust to taste)

½ tsp black pepper

½ tsp chili flakes (optional)

2 tbsp chopped onion or red onion (optional)

Optional add-ins: lemon juice, fresh dill/mint, a pinch of sugar

4 Easy Steps
1) Slice cucumbers

Wash cucumbers and slice into thin rounds or half-moons.
(If skin is thick, peel stripes off.)

2) Salt + rest (for crunch)

Sprinkle cucumbers with salt, mix, and leave 5–10 minutes.
Then drain any extra water.

3) Mix dressing

In a bowl, combine:

vinegar

oil

pepper

chili flakes

onion (if using)

4) Toss + chill

Add cucumbers to dressing and toss well.

Vegetable Beef Soup / Stew
Ingredients (4–6 servings)

700 g beef chuck/stew meat, cut into chunks

2–3 tbsp oil

1 large onion, diced

3 carrots, sliced

2 celery stalks, diced

3–4 potatoes, peeled + cubed

250–300 g green beans, trimmed (cut in half if long)

3–4 garlic cloves, minced

2 tbsp tomato paste

1.2 L beef broth/stock

1 tsp dried thyme

1–2 bay leaves

1 tsp black pepper

1–1½ tsp salt (adjust to taste)

Optional

1 tsp paprika or chili flakes

Slurry to thicken: 1½ tbsp flour + 2 tbsp water (or cornstarch)

Steps
1) Brown the beef

Pat beef dry. Season lightly with salt/pepper.

Heat oil in a big pot on medium-high.

Brown beef in batches 2–3 min per side. Remove.

2) Cook the base

Lower heat to medium.

Add onion + celery, cook 4–5 min until soft.

Add garlic, cook 30 sec.

Stir in tomato paste, cook 1 min.

3) Simmer

Return beef to pot.

Add carrots, potatoes, thyme, bay leaves, pepper, stock.

Bring to a boil, then reduce to low.

Cover and simmer 1 hour.

4) Add green beans

Add green beans after the first hour.

Simmer 20–30 min more, until beef is tender.

5) Thicken (optional)

Stir in slurry and simmer 5 min until slightly thicker.

6) Finish

Remove bay leaves.

Taste and adjust salt/pepper.

Serve hot.

Quick tips

If beef isn’t tender yet, simmer longer — it’ll soften.

Want richer flavor? Add a splash of wine or Worcestershire with the stock.

700 g beef chuck or stewing beef, cut into 3–4 cm cubes

2–3 tbsp olive oil (or any neutral cooking oil)

Veg

1 large onion, diced

3 carrots, sliced into rounds

2 celery stalks, diced

3–4 medium potatoes, peeled and cut into chunks

250–300 g green beans, trimmed (cut in half if long)

3–4 garlic cloves, minced

Flavor base

1.2 L beef stock (or water + stock cube)
