Spicy Algerian Garlic Harissa Sauce
Ingredients:
3 tablespoons olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon harissa paste
1 tablespoon tomato paste
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional, for extra heat)
1/4 cup water
1 tablespoon fresh lemon juice
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Directions:
Heat olive oil in a small saucepan over medium heat.
Add the chopped onion and sauté for 4-5 minutes until soft and translucent.
Stir in the minced garlic and cook for another minute until fragrant.
Add the harissa paste, tomato paste, cumin, coriander, paprika, and cayenne pepper (if using). Cook for 2-3 minutes, stirring frequently.
Pour in the water and bring the mixture to a simmer. Allow it to cook for 5-7 minutes until the sauce thickens.
Stir in the fresh lemon juice and season with salt and pepper to taste.
Remove from heat and garnish with chopped cilantro.
Serve warm or at room temperature as a dipping sauce, marinade, or topping for grilled meats and vegetables.
