**For chole:**
- 2 cups chickpeas, soaked overnight
- 2 onions, finely chopped
- 2 tomatoes, pureed or chopped
- 1 tbsp ginger-garlic paste
- 2 green chilies
- 2 tsp chole masala
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
- 2–3 tbsp oil
- Fresh coriander
- Lemon juice
**For bhature:**
- 2 cups maida
- 1/2 cup curd
- 1/2 tsp baking soda
- 1 tsp sugar
- Salt to taste
- Water as needed
- Oil for frying
# # How to make chole
1. Pressure cook soaked chickpeas with salt and a little tea bag or black tea for dark color, if you like.
2. Heat oil, add cumin seeds, then onion and sauté until golden.
3. Add ginger-garlic paste and green chilies.
4. Add tomatoes and all dry spices, cook until the masala leaves oil.
5. Add boiled chickpeas and some cooking water.
6. Simmer 10–15 minutes, mash a few chickpeas for thickness.
7. Finish with garam masala, lemon juice, and coriander.
# # How to make bhature
1. Mix maida, curd, baking soda, sugar, and salt.
2. Add water gradually and knead into a soft dough.
3. Cover and rest for 2–3 hours.
4. Divide into balls and roll into medium circles.
5. Deep fry in hot oil until puffed and golden.

Serve hot bhature with chole, onion rings, lemon wedges, and pickle.
