The new growth sprouts of bamboo plants are called bamboo shoots. They are harvested as soon as the plant breaks through the ground, as they become way too hard once the stalk begins to grow. So they need to be harvested at the right time. The shoots are used in various forms - fresh, dried, fermented and, extract; in meats, fish, pickles, salads, broths, and stir-fries. In north-eastern cuisine, the edible young shoots abundantly available during the monsoons bond the eight states.
Bamboo is inseparably linked to the northeast, and its consumption is not just limited to food. Parts of the plant are also used for construction, household items, medicinal purposes, and agricultural tools.
Ushoi Kangshu is a Manipuri dish prepared by boiling the shoots and mashing them with boiled yellow peas, pan-roasted Ngari, and green chilies with a garnish of native herbs.
Fresh bamboo shoot is loved for its crunchy texture, woody flavor with bitter undertones.
