Valentine’s Heart Linzer Cookies Recipe💕

Ingredients :
✓For the Cookies:
•1 ½ cups (190g) all-purpose flour
•½ cup (65g) almond flour
•½ tsp ground cinnamon (optional)
•¼ tsp salt
•½ cup (115g) unsalted butter, softened
•½ cup (100g) granulated sugar
•1 large egg yolk
•1 tsp vanilla extract
✓For the Filling:
•½ cup raspberry or strawberry jam
•Powdered sugar for dusting
Instructions :
1. Prepare the Dough:
•In a medium bowl, whisk together all-purpose flour, almond flour, cinnamon, and salt. Set aside.
•In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy (about 3-4 minutes). Add the egg yolk and vanilla extract, and continue beating until combined.
•Gradually add the dry ingredients to the wet mixture, mixing just until the dough comes together. Do not overmix.
2. Chill the Dough:
•Divide the dough into two discs, wrap them in plastic wrap, and refrigerate for at least 1 hour or until firm.
3. Roll and Cut the Cookies:
•Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper. On a lightly floured surface, roll out the dough to about ⅛ inch thickness.
•Use a round cookie cutter to cut out the base cookies. For half of the cookies, use a smaller heart-shaped cutter to cut out a heart in the center.
4. Bake:
•Place the cookies about 1 inch apart on the baking sheets. Bake for 10-12 minutes, or until the edges just begin to turn golden. Let them cool completely on a wire rack.
5. Assemble the Cookies:
•Dust the cookies with the heart cutouts generously with powdered sugar. Spread about 1 tsp of jam on the flat side of each solid cookie base. Gently sandwich the powdered sugar-coated top cookie onto each jam-covered base.
6. Serve:
