🔥 Mumbai Style Crispy Prawns Koliwada 🦐

🦐 Ingredients
For the Prawns:
• 500g prawns
• Salt, to taste
• ¼ tsp turmeric powder
• 1 tbsp lemon juice
🌿 Green Paste (Vaatan):
• Small handful fresh coriander
• 10–12 garlic cloves
• ½ inch ginger
• 3 green chillies
• Water, as required
🌶️ Powdered Spices:
• 1½ tbsp Kashmiri red chilli powder
• 1 tbsp spicy red chilli powder
• 1 tbsp coriander powder
• ½ tsp garam masala
• ½ tsp cumin powder
• ½ tsp black salt
• ¼ tsp black pepper powder
• ½ tsp dry mango powder (amchur)
• ½ tsp chaat masala
• A pinch of asafoetida (hing)
• 1 tsp lemon juice
• 1 tbsp oil
🥣 Batter:
• 1 egg white
• 3 tbsp fine gram flour (besan)
• 4 tbsp corn flour
👨🍳 Method
1️⃣ Marinate the prawns with salt, turmeric, lemon juice, and all the powdered spices. Rest for 15 minutes.
2️⃣ Grind coriander, garlic, ginger, green chillies, and a little water into a smooth green paste.
3️⃣ Add the green paste and oil to the marinated prawns. Mix well.
4️⃣ Add egg white, gram flour, and corn flour. Coat the prawns evenly.
5️⃣ Heat oil to about 170°C and deep-fry the prawns in small batches until light golden. Remove and rest for 5 minutes.
6️⃣ Heat the oil on high and fry the prawns again until crispy and golden brown.
7️⃣ Drain excess oil and serve hot with lemon wedges and mint chutney. 🍋🦐
