🌽🥔🧀 CRISPY CHEESY CORN–POTATO CROQUETTES
Crispy little potato croquettes packed with sweetcorn, spring onion and a gentle chilli kick — soft and fluffy inside with plenty of savory flavor. 🌽🔥 Perfect for an easy snack or appetizer!
📝 Ingredients
• Exactly 300g peeled potatoes, cut into exactly 12 naturally irregular chunks
• Exactly 700ml water
• ⅓ cup cooked sweetcorn kernels
• 2 tbsp cornstarch
• 1 tbsp finely sliced spring onion
• ¼ tsp chilli flakes
• ¼ tsp garlic powder
• ¼ tsp salt
👩🍳 Method:
1️⃣ Cut exactly 300g peeled potatoes into 12 naturally irregular chunks — keep the pieces realistically varied rather than identical.
2️⃣ Add exactly 700ml water to a saucepan. Add all 12 potato chunks and cook until completely tender. 🥔
3️⃣ Drain thoroughly and allow the potatoes to steam-dry briefly so excess moisture escapes.
4️⃣ Mash until mostly smooth and fluffy.
5️⃣ Add the ⅓ cup cooked sweetcorn, 2 tablespoons cornstarch, 1 tablespoon sliced spring onion, chilli flakes, garlic powder and salt. 🌽🌶️
6️⃣ Mix until everything is evenly distributed and the potato mixture holds together.
7️⃣ Take portions and shape them into compact croquettes, pressing gently so they remain intact during cooking.
8️⃣ Cook until the outside develops a golden, crisp finish and the centres are piping hot.
9️⃣ Rest briefly after cooking so the croquettes firm slightly while retaining their soft potato centres.
