Chicken roll 🍗in ASMR

For -2 rolls

INGREDIENTS
* Chicken tikka-200 nos
* Eggs 🥚 -2to3 no
* Chapati-2 nos
* Onions-1 medium size
* Capsicum 🫑- quarter
* Oil
* Cumin-1/2 tsp
* Salt 🧂
* Turmeric powder-1/2 tsp
* Chilli powder-1 tsp
* Cumin powder-1/2 tsp
* Chopped coriander-2 to 3 sprig

METHOD
* Cut onions and capsicum and coriander leaves
* Cut chicken tikka into thick julienne
* Beat eggs with salt/turmeric and coriander
* In a pan heat oil and add cumin followed by onions and capsicum once its sautéed add salt/ turmeric and chilli powder
* Once the raw flavour of the powders are gone add little water and reduce it the add chicken tikka and cook further
* Once everything is combined nicely finish it with cumin powder and chopped coriander leaves
* Make two chapatis once the chapati is ready pour eggs in the tawa and put the chapati on the top once the eggs is cooked set them aside
* Now roll the chapati with filling as shown in the video

Saffron and nuts 🌰 pulao

INGREDIENTS
* Saffron - few strands
* Almond -8-10 pieces
* Cashew1-8-10 pieces
* Raisin’s-8-10 pieces
* Basmati rice -125 gms
* Ghee -1 tbsp
* While spices with cumin
* Sliced onions 🧅 - half
* Salt -to taste
* Milk -1/2 cup

METHOD
* Wash Soak the basmati rice for 60 minutes
* Add the saffron ok the half cup of warm milk
* Heat ghee and fry the nuts and set them aside in the remaining ghee add whole garam spices and sliced onions and saute till it becomes wilted
* Then add the strained rice and cook for a minute then the measured water for 1 cup of rice 1.5 cup of water and .5 cup of milk which we soaked the saffron
* Add sufficient salt an mix once the rice and water is on the same level add the fried nuts and cover them with the lid
* The use a old dosa tawa to dum we need the put them in dum for 12 minutes on a very slow fire And rest for 5-10 minutes before opening
* Out saffron and nuts pulao is ready Serve hot

INGREDIENTS

Chilli 🌶️ omelette 🍳

INGREDIENTS
* Eggs-3 nos
* Ginger-thumb size
* Garlic -3 cloves
* Green chilli-1 nos
* Spring onions -2 sprig
* Onions 🧅 -1 small size
* oil (choice)-5-10 ml
* Cooked chilli 🌶 paste -1 tsp
* Dark soya sauce-1/2 tsp
* Tomato sauce-1 tsp
* Salt
* Pepper

METHOD
* Add onions/green chilli/spring onions then salt and pepper to the eggs and brat them
* Heat oil in the paniyaram pan and pour the eggs in the moulds cover and cook them once half done flip the eggs cover and cook till its well done transfer them into another bowl
* Heat oil add chopped ginger/ garlic and sauté once cooked Add cooked chilli paste / tomato sauce and mix and add half cup of water and mix then add dark soya season it with salt/pepper and pinch of sugar
* mix well then add the eggs to it and toss well and finish it with spring onions
* Our chilli eggs is ready

Fish curry with raw mango 🥭

INGREDIENTS
* Fish 🐠 -250 gms
* Raw mangoes 🥭 -half
* Coconut oil-10 ml
* Garlic julienne-3-5 cloves
* Ginger julienne - small piece
* Slit green chillies -2 nos
* Curry leaves 🍃
* Sliced onions 🧅 -1 nos
* Salt
* Turmeric powder-1/4 tsp
* Chilli 🌶 powder-1.5 tsp
* Thick extract of coconut 🥥 milk-150 ml

METHOD
* Marinate the fish with salt and turmeric powder
* In a pan heat coconut oil then add garlic, ginger, and green chilli and saute then add sliced onions 🧅 along with curry leaves
* Sauté till the onions are wilted Then add turmeric/ chilli powder and sauté till the raw flavour goes off
* Add sufficient water to cook the fish bring it to boil then add the marinated fish then the raw mango 🥭 Cover and cook for 8-10 minutes or till the fish is cooked
* Once the fish is cooked add the thick extract coconut milk and finish it
* Serve it with appam or idiappam

Fish fry 🐠

INGREDIENTS
* Fish slice-5 nos (250-300 gms)
* Sliced shallots-5 nos
* Shredded curry leaves- 1 sprig
* Grated coconut-1.5 tbsp
* Ginger garlic paste-1 tsp
* Salt-to taste
* Crushed pepper-1 tsp
* Turmeric powder-1/2 tap
* Kashmiri chilli powder-2 tbsp
* Rice flour-1 tbsb
* Lime juice-1 nos
* Coconut oil for frying

METHOD

* Make a Marination for the fish as shown in the video with the ingredients grated coconut is optional
* Then marinate the fish and set it aside for 30 minutes
* In a tawa add coconut oil and start frying you fish 2 minutes on each side or till the fish is cooked and well done serve hot along with fish curry 🍛

Chicken salad with avocado 🥑

INGREDIENTS
* Chicken(breast)-1 nos
* Avocado 🥑-1 nos
* cherry tomatoes - 8-10 nos
* Cucumber 🥒-1 nos
* Onions-1 small
* Lettuce 🥬- 1 small bunch
* Mayonnaise-2 tbsp
* Salt
* Pepper
* Olive oil
* Lime juice -1
METHOD
* Season the chicken with salt and pepper cook it till well done and cut them into cubes
* In a mixing bowl make a salad dressing with mayonnaise /salt/pepper/olive oil and lime juice and mix them nicely then add the rest of the ingredients and mix till the dressing is completely mixed
* And our chicken salad is ready

Salad 🥗

INGREDIENTS

Chicken Yakhni pulao 🍗

Please note :

* For one cup of rice 1.5 cup of water is generally suggested for basmati rice while pressure cooking for some rice it may vary so pls do be careful while measuring the water

Whole spices
* Cardamom-2 nos
* Cloves-3 nos
* Cinnamon-small piece
* Whole coriander seeds-1/2 tsp
* Fennel-1/2 tsp
* Pepper-1/2 tsp
* Bay leaves-2 nos

INGREDIENTS
* Chicken -400 gms
* Basmati rice -200 gms
* Ghee - 1.5 tbsp
* Sliced onions 🧅 - 2 medium sized
* Ginger sliced-small pieces
* Garlic sliced-3-4 cloves
* Slited Green chilli-2 nos
* Salt -to taste
* Milk-100 ml
* Curd - 2 tbsp
* Garam masala-1.5 tsp

METHOD

* Soak the basmati rice for 30 minutes
* Heat ghee add whole spices then sliced ginger and garlic and sauté
* Add sliced onions and green chilli along with sufficient salt then Sauté the onions till it turns weak and add the chicken to it and cook for couple of minutes then add curd and saute
* At this stage add one glass of water and half glass of milk cover and pressure cook for two whistle once the pressure is gone remove the chicken and measures the stock for the rice the ratio of 1 cup of rice 1.5 cup of stock
* Now add the stock back to the cooker and the soaked rice and mix then the cooked chicken on the top pressure cook for 2 whistle in high fire the rest it for 5-10 minutes or till the pressure is gone
* Now our chicken yakhini pulao is ready

Omelette 🍳 curry 🍛

* Eggs -3 no’s
* Toor dal -1/2 cup( boiled)
* Coconut oil-10 ml
* Mustard seeds- 1/2 tsp
* Dried red chilli 🌶️-1 nos
* Shallots - 4-5
* Green chilli - 1 nos
* Ginger 🫚-small piece
* Garlic-3 -5 cloves
* Salt- to taste
* curry leaves

For paste
* Grated Coconut 🥥 -50-75 gms
* Fennel -1 tsp
* Black pepper-1 tsp
* Cinnamon-small piece
* Cloves-3 nos
* Shallots -5 nos
* Garlic-4 cloves
* Coriander-2 sprig
* Turmeric powder- 1/4 tsp
* Coriander powder -1 tsp
* Kashmiri chilli powder-1/2 tsp

METHOD:

* For coconut paste Heat oil add saunf/pepper/cinnamon/cloves/garlic/shallots and sauté now add the grated coconut and mix then add poppy seeds mix well followed by adding coriander leaves
* Once the coconut browned add turmeric/chilli powder and coriander powder and sauté cool the mix and make a fine paste
* Beat the eggs season season with salt pepper and onions/ green chilli and coriander make a omelette in the pan as shown in the video
* In a blender jar crush ginger/garlic/green chilli and shallots together
* For the gravy heat oil crackle mustard seeds and red chilli then add the crushed ingredients and sauté followed by add the coconut paste and mix along with one cup of water
* At this stage add the boiled toor dal and sufficient salt then start cooking the gravy once boiled cover and cook for 10-15 on a very slow flame
* Once the gravy is set add the omelette and mix gently finish it with chopped coriander leaves
* Serve hot along with steamed rice

Chilli 🌶️ Chicken 🍗
INGREDIENTS
* Chicken leg boneless -250 gms
* Green capsicum -quarter
* Onions -half
* Salt -to taste
* Pepper -tsp
* Sugar-1/2 tsp
* Dried red chilli-1 nos
* Chopped Ginger 🫚-small piece
* Chopped Garlic -3 cloves
* Sliced green chilli-2 nos
* Cooked chilli paste -1 tbsp
* Corn flour -2 tbsp
* oil-5 ml
* Dark soya sauce-1 tsp
* Tomato ketchup -1 tsp
* Chopped spring onions
* oil-for frying
* Beaten eggs(optional)

METHOD
* Marinate the chicken with salt/pepper/oil/ soya sauce and corn flour drizzle little water and oil and make a thick batter
* Heat oil and frying the chicken till its cooked don’t make it too crispy and add the cut capsicum and onions in the same oil and fry them too
* In a pan heat oil then add red chilli followed by chopped garlic/ginger and sliced green chilli and and sauté now add cooked chilli paste and mix the add dark soya sauce and tomato ketchup and mix them nicely along with quarter cup of water
* Season them with salt/pepper and sugar then add the fried chicken along with capsicum and onions toss them nicely
* Finish it with chopped spring onions
* And our dry chilli chicken is ready serve with fried rice or noodles
