Butter chicken-Recipe ⬇️

INGREDIENTS
* Chicken leg boneless-500gms
* Whole garam masala
* Tomatoes 🍅 -6 nos (small)
* Cashew nut - 15-20 nos
* Cream -10 ml
* Butter 🧈 -10 gms
* Mustard oil -5ml
* Chopped Onions 🧅 -1 nos
* Ginger garlic paste-1 tsp
* Garam masala-1/2 tsp
* Kasuri methi-little
* Coriander leaves chopped-for garnish

FOR CHICKEN MARINATION
* Salt-1/2 tsp
* Black salt-1/2 tsp
* Jeera powder -1/2 tsp
* Garam masala-1/4 tsp
* Chaat masala-1 tsp
* Ginger garlic paste-1 tbsp
* Kashmiri chilli powder -2 tbsp
* Curd-2-3 tbsp
* Mustard oil-1 tsp

METHOD
* Boil the tomatoes 🍅 along with cashews and chilli in a pressure cooker for 1 whistle allow it to cool down then make a fine puree
* Marinate the chicken leg with the above mentioned ingredients and give little smoke for the flavour
* In a pan heat mustard oil and cook the chicken leg both sides and keep it aside
* Now in a pan heat oil add garam masala add chopped onions once its browned add ginger garlic paste once raw flavour is gone add the puréed tomatoes season it with salt and cook for 15-20 minutes minutes
* Then add the cooked chicken and keep in simmer for 10 -15 minutes minutes
* Finish it with butter/cream/garam masala and kasuri methi
* And chicken butter masala is ready

Cajun crusted chicken breast-Recipe ⬇️

INGREDIENTS
* Chicken breast -2 nos
* Salt 🧂
* Crushed pepper
* Cajun spice
* Oregano
* Olive oil
* Broccoli
* Basmati rice
* Chopped parsley chopped garlic
* Crushed garlic 🧄
* Butter
* Garlic with skin

METHOD

* Cut and clean the chicken breast marinate it with salt/pepper and cajun slice and set aside
* Cut the broccoli and boiled it with salt and little sugar
* Wash and soak the basmati rice and boil and strain and keep it aside
* In a pan heat oil start searing the chicken breast and add crushed garlic and butter once its seared rest for 10 minutes
* Preheat the oven for 200 degree and cook the breast for 7-10 minutes
* Heat oil in a pan and add garlic and sauté then add broccoli and season in with salt/pepper and oregano
* Same pan butter and garlic boiled basmati rice add the burnt butter from chicken and finish with chopped parsley
* Plate them together and eat it like a king 👑
* And your cajun crusted chicken breast is ready

INGREDIENTS
* Chicken strips(breast)-200 gms
* Cashew-nut-10-15 nos
* Dried red chilli-3 nos
* Ginger-thump sized
* Garlic -5 cloves
* Spring onions -2 sprig
* Onions 🧅 -1 medium
* Green capsicum 🫑 -half
* Corn flour -1 tbsp
* oil (choice)-10 ml
* Cooked chilli 🌶 paste -1tbsp
* Dark soya sauce-1tsp
* Light soya sauce - to tatse

METHOD
* Heat oil and fry the cashew and chilli set it aside
* In same oil add the onions and sauté then add the capsicum 🫑 once sautéed add the shredder chicken and cook
* once the chicken is almost cooked add the julienne ginger and chopped garlic and mix
* Season it with cooked chilli paste /light soya and dark soya and add half cup of water
* Once cooked add the corn flour slurry and finish it with spring onions

* Walnuts-5 nos

Chickpea salad 🥗

INGREDIENTS
* Boiled chickpeas -200gms
* Cucumber 🥒-half
* Onions-half
* Tomatoes-half
* Salt
* Pepper
* Cumin powder
* Olive oil
* Curd -50ml
* Chopped coriander

METHOD
* Pressure cool the overnight soaked chickpea for 5 whistle 1 in high flame 4 in low
* In a mixing bowl add curd season them with salt/pepper/cumin powder/olive oil and give it a nice whisk
* Add the boiled chickpea followed by onions/cucumber and tomatoes
* Mix them nicely add chopped coriander
* And our easy chickpea salad is ready

Vegetables Thengapaal Birinji -Recipe ⬇️

INGREDIENTS
* Carrot-25 gms
* Beans-25gms
* Green peas 🫛-15gms
* Potatoes -25 gms
* Soya chunks -10pcs
* Basmati rice -150 gms
* Ghee -1 tbsp
* While garam masala
* Sliced onions 🧅 - 1 no medium size
* Ginger garlic paste -1 tsp
* Slited Green chilli-2 nos
* Salt -to taste
* Fennel powder-1 tsp
* Coconut milk -1 cup
* Saffron - 10 strands
* Chopped Coriander and mint for garnish

METHOD
* Soak the basmati rice for 30 minutes
* Cut the vegetables into batons
* Heat ghee add while garam masala and sliced onions and salt and green chilli
* Sauté the onions till slightly brown and add ginger garlic paste and cook for 10 sec and fennel powder and sauté
* Now add the vegetables to it and mix well and drizzle some water cover and cook till the veggies are almost cooked and add the soaked soya chunks and mix
* Then add chopped mint and coriander leaves add 1 cup of water and 1 cup of coconut milk and saffron mix well
* When the rice and water on the same level cover and dum for 12-15 minutes
* And rest for 5 minutes
* Serve hot with raitha and some potatoe fry
