Fish Roast 🐠

INGREDIENTS
* Fish 🐟 cubes-250 gms
* Coconut oil- 10 ml
* Mustard seeds-1/2 tsp
* Red chilli whole-1 nos
* Curry leaves -1 sprig
* Chopped garlic 🧄 -2-3 cloves
* Chopped ginger - small piece
* Sliced green chilli -1 nos
* Sliced onions 🧅 - 1 medium sized
* Sliced tomatoes 🍅 -1 medium sized
* Salt 🧂
* Turmeric powder -1/4 tsp
* Chilli powder -1/2 tsp
* Coriander powder -1 tsp
* Crushed pepper -1tsp
* Chilli flakes -1tsp
* Crushed coriander seeds -1tsp
* Chopped coriander 🌿 leaves

For fish marination
* Salt-to tatse
* Ginger garlic paste
* Turmeric powder-1/2 tsp
* Kashmiri chilli powder-1 tbsp
* Lemon 🍋 juice
* Rice flour
* Sunflower oil to fry the fish

METHOD
* Marinate the fish 🐟 cubes with salt 🧂 chilli and turmeric powder and ginger garlic paste and add rice flour/lime juice and marinade the fish and keep it aside for 30 minutes
* In a kadai heat oil and fry the fish cubes crispy and well done and keep it aside.
* Heat coconut oil crackle mustard seeds and add red chillies then curry leaves and
* Add chopped garlic 🧄,ginger,green chilli and sliced onions 🧅 add salt And sauté till golden brown
* once the onions is golden brown and turmeric / chilli powder/ coriander powder and sauté till the raw flavour goes then add sliced tomatoes 🍅
* Sauté for few minutes once it is Sautéed add sufficient water to cook the masala
* Once the masala is cooked add crushed pepper/coriander and chilli flakes finish it with chopped coriander leaves 🍃 and check for seasoning
* Add the fried fish cubes and mix gently so the fish doesn’t break
* Serve hot as an appetiser or main course

Simple fish curry 🍛

INGREDIENTS
* Fish 🐠 -500 gms
* Coconut oil/ sesame oil-10 ml
* mustard seeds-1/2 tsp
* Fenugreek-1/2 tsp
* Curry leaves 🍃-1 sprig
* Green chilli-2 nos
* Shallots-15-20 nos
* Garlic cloves-5-8
* Ginger 🫚-small piece
* Tomatoes 🍅-1 nos medium sized
* Turmeric powder-1/2 tsp
* Kashmiri chilli powder-4 tsp
* Tamarind pulp-accordingly for sourness

METHOD
* Marinate the fish with salt and turmeric powder
* In a kadai heat oil add shallots followed by garlic and ginger and sauté till they turn brown then add tomato and salt cook till the tomatoes are mashed
* At this stage add turmeric and chilli powder then cook till the raw flavour is gone cool them completely and make a smooth paste
* In a clay pot heat coconut oil crackle mustard seeds and fenugreek followed by curry leaves then add the paste and cook on a slow fire for 1 minute and add sufficient water for the curry
* Bring it to boil add it green chilli and tamarind pulp cover and cook for 10-15 minutes on a very slow fire now add the marinated fish to it
* Cover and cook for 10 minutes
* And our fish curry is ready Serve hot

Whiskey 🥃 flavour fruit cake

INGREDIENTS
For the fruits
* Mixes fruits cooked -200 gms
* Whiskey - 20 ml ( optional)
For the batter
* Butter 🧈-100 gms
* Maida ( refined flour)-100 gms
* sugar (powdered)100 gms
* Eggs 🥚-100 gms(2 nos)
* Baking powder -3gms
* Vanilla essence

Method

* Cream butter and sugar together then add the eggs one by one and cream them together and the vanilla essence and mix
* Then add the dry fruits then fold it now add flour with baking powder and fold them
* Once everything is combined nicely in a cake mould add butter sheet and pour the mix
* Bake at 170 for 35 to 40 minutes or till the cake is baked well done
* Once the cake is completely cool-down remove from the mould and you can spray or brush up some more whiskey

Marry Me chicken 🍗

INGREDIENTS
* Chicken breast -2 nos
* Sun-dried tomato 🍅 -3-5 pieces
* Olive oil-5-10 ml
* Butter -5 gms
* Chopped garlic 🧄 -3-4cloves
* Chopped onions 🧅 - half
* Salt 🧂
* Crushed pepper
* Oregano
* Basil leaves- few leaves 🍃
* Fresh cream-75-100 ml
* Grated parmesan Cheese 🧀
* Refined flour for dusting

METHOD
* Marinate the chicken breast with salt and pepper dust it with refined flour
* In a pan heat olive oil start searing the chicken on both sides and set them aside
* In the same pan Add butter followed by chopped garlic 🧄 and chopped onion 🧅 sauté till the onions are weak then add the shredded sun-dried tomatoes and mix
* At this stage add one cup of water bring it to boil season it with salt/pepper and oregano and bring back the chicken cover and cook for 5 minutes then open and turn the chicken further cover and cook till the chicken is well done
* Once the chicken is cooked to perfection add fresh cream and mix finish it with shredded basil leaves and grated cheese
* Serve hot with pasta or herbed rice or steamed rice

Egg Masala 🥚

INGREDIENTS
* Boiled eggs-3 nos
* oil-10 to 15 ml
* Fennel-1 tsp
* Mustard seeds-1/2 tsp
* Curry leaves-1 sprig
* Green chilli -1 nos
* Garlic cloves-8 to 10 nos
* Shallots-15-20 nos
* Dried red chilli-2 nos
* Tomatoes 🍅-1 medium sized
* Turmeric powder-1/2 tsp
* Chilli powder 1- tsp
* Coriander powder- 1 tbsp
* Garam masala-1 tsp
* Chopped coriander leaves-2 sprig
* Salt
* Crushed pepper-1 tsp

METHOD
* Boil and peel the eggs set them asid
* Heat oil in a kadai add fennel and garlic sauté till it turns golden brown then add shallots followed by dried red chilli 🌶️
* Once the shallots are weak add sliced tomatoes 🍅 and little salt and cook till the tomatoes are mashed then add turmeric/chilli and coriander powder once the raw flavour is gone cool them completely
* Then make a coarse paste in the same kadai heat oil crackle mustard seeds and add curry leaves and green chilli and saute now add the cooked paste to it along with one cup of water to cook the masala
* On a slow fire cook the masala for 5-10 minutes check for seasoning add salt and crushed pepper when the masala is cooked add the boiled eggs to in and cook for 2 more minutes
* Finally finish it with garam masala and chopped coriander leaves 🍃

Gun powder which also known as Chutney powder or Idli mulagapodi

INGREDIENTS
* Urad dal -1 cup
* Chana dal-1/2 cup
* Roasted chana dal-1/2 cup
* White till-1 tbsp
* Dried Red chilli 🌶️ 8-10 nos
* Curry leaves 🍃-1 sprig
* Rock salt-1 tbsp
* Hing powder or chunk(asafoetida)-1 tsp
* gingelly oil-5 ml

METHOD
* Roast all the ingredients separately
* Allow them to cool fully and ground it into a powder

Creamy pumpkin 🎃 soup 🥣

INGREDIENTS
* Pumpkin -500 gms
* Ginger 🫚 - small piece
* Garlic 🧄-4 to 5 cloves
* Onions 🧅-1 small
* Olive oil -10-15 ml
* Salt 🧂- to taste
* Pepper-1 tsp
* Seasoning powder - one pinch
* Butter 🧈-5 -10 gms
* Cream-10-15 ml

METHOD
* Peel and cut the pumpkin 🎃 into small cubes
* Heat oil start cooking the pumpkin on a high fire along with onions/garlic and ginger till the pumpkin get nice brown colour on the top and add sufficient water to cook it
* Season it with sufficient salt and pepper and cover and cook till the pumpkin are well cooked and mashed transfer it into a blender and make a smooth paste
* Next Bring the soup base to boil and add butter cubes and fresh cream and veg seasoning powder
* Serve hot with cheese bread

Madurai style chicken sukka 🍗

INGREDIENTS
* Chicken lollipops -300 gms
* Gingelly oil-15 ml
* Crushed garlic 🧄-6 cloves
* Chopped ginger-small piece
* Small onions-15 pieces
* Curry leaves 🍃 -1 sprig
* Salt 🧂
* Turmeric powder -1/2 tsp
* Chilli 🌶️ powder -1 tsp

FOR POWDER
* Cardamom-3 nos
* Cloves -3 nos
* Cinnamon stick -1 piece
* Pepper corns-1.5 tsp
* Fennel seeds-1tsp
* Cumin seeds - 1tsp
* Kalpasi -1 small piece
*
METHOD
* Marinate the chicken lollipop with salt turmeric and chilli powder
* Heat a pan and dry roast the above mentioned ingredients and cool them and powder in a blender
* Heat gingelly oil in a kadai
* Add chopped ginger/ crushed garlic /curry leaves and sliced small onions🧅
* Sauté till become golden brown then turmeric/chilli powder/ salt sauté till raw flavours are gone
* Add marinated chicken pieces and mix well cook for 5 minutes
* Add roasted powder to it and mix well then cover and cook for 5 minutes or till the chicken is cooked
* Now Start drying up the masalas on a medium flame till it become dry and masalas are well coated with the chicken
* Serve it with steamed rice along with hot rasam

Chicken Biriyani 🍗
INGREDIENTS
* Chicken biriyani cut-500 gms
* Kaima(jeeraga shala) rice -400 gms
* Sunflower oil -for frying
* Ghee - 3 tbsp
* Whole spices
* Sliced onions 🧅 - 6 no’s medium sized
* Ginger - thumb size
* Garlic-5 cloves
* Green chilli-3-4 nos
* Sliced Tomatoes 🍅-1 medium sized
* Salt -to taste
* Turmeric powder -1 tsp
* Chilli powder-3 tsp
* Garam masala-2 tsp
* Curd - 2 tbsp
* Chopped mint and coriander leaves

METHOD
* Marinate the chicken with ginger garlic paste/salt/turmeric/chilli powder and garam masala and rest it for 1 hour
* Wash the rice 3 to 4 times and Soak it for 30 min
* Heat oil and fry cashew and raisins first followed by the onions fry them till golden brown then fry the marinated chicken in the same oil
* Add the same oil to the biriyani pot which we fried the chicken
* To make the masala add sliced onions and sauté once the onions are wilted add crushed ginger/garlic/green chilli and sauté till the raw flavour is gone
* Once the masala is cooked then add sliced tomatoes and cook further once tomatoes are getting mashed add sufficient salt for the masala with turmeric and chilli powder and sauté till the raw flavour is gone
* Then add chopped mint and coriander and mix well the add curd followed by fried chicken and mix till the masala is coated with chicken then add garam masala and fried onions and set the pot aside
* Now For ghee rice heat ghee in a pan once hot add whole spices and sliced onions and sauté then add ginger garlic paste and sauté till the raw flavour is goes off
* Then add the strained rice and mix well for 1-2 minutes then add the water the ratio is 1:2 one part rice and 2 part water season it with sufficient salt
* Once rice and water are on same level cover and dum for 10-12 minutes by keeping a tawa underneath and bowl of water on the lid open after the rice is cooked
* Reheat the masala then start layering the ghee rice on top of the chicken then add the fried onions /chopped mint and coriander then the garam masala/ fried cashew and raisins and dash of ghee and cover it with a tight lid and dum it for 12-15 minutes on a very slow flame by keeping a tawa underneath and rest for 5 minutes before opening
* Serve hot
