Potato fry🥔

Perfect side dish with curry leaf twist🌿

Ingredients
* Potatoes -2 nos medium
* oil -5 ml
* Mustard seeds-1/2 tsp
* Sliced shallots-3-5 nos
* Curry leaves leaves
* Salt-to taste
* Turmeric powder -1/2 tsp

For the curry leaf powder
* Peppercorn-1/2 tsp
* Urad dal-1/2 tsp
* Chana dal 1/2 tsp
* Dried red chilli-2 nos
* Curry leaves- 3-4 sprigs

Method
* Peel and cut the potatoes 🥔 into small cubes wash it nicely and strain
* Boil the potatoes till they are well cooked make sure you don’t over boil them
* For the curry leaf powder powder dry roast the ingredients as shown in the video and allow them to cool completely before making a coarse powder
* In a pan heat coconut oil crackle mustard seeds and curry leaves followed by sliced shallots once the shallots turn brown add turmeric and sufficient salt and sauté till the raw disappears
* At this stage add the potatoes back in and increase the heat and toss them then add the curry leaf powder and toss them till the powder is evenly coated with the potatoes
* Serve along with your favourite dish of choice

One pot masala chicken pulao🍗

INGREDIENTS
* Chicken breast -200 Gms
* Basmati rice -1 cup (150 Gms)
* Oil-5-10 ml
* Ghee -1 tbsp
* Whole spices with bay leaf
* Sliced onions 🧅 - 1 no medium size
* Cubes tomato 🍅-1 small nos
* Ginger garlic paste -1 tsp
* Green chilli-2 nos
* Salt -to taste
* Turmeric powder-1/4 tsp
* Chilli powder- 1 tsp
* Garam masala-1/2 tsp
* Chopped Coriander leaves

METHOD
* Wash Soak the basmati rice for 30 -45 minutes
* Heat oil add whole spices with bay leaf and followed by slit green chilli and then sliced onions
* on a slow to medium heat saute the onions till it becomes soft then add ginger garlic paste and saute when the aroma comes out
* At this stage add cubes of tomatoes 🍅 then season it with sufficient salt and sauté them add turmeric and chilli powder
* Once raw flavour disappears add marinated chicken cubes and saute the cover and cook it for 3-4 minutes then add the measured water for 1 cup rice i am using 2 cup water bring it to boil add soaked basmati rice and start cooking check for seasoning if required add salt
* When the rice and water on the same level add chopped coriander,garam masala and ghee
* Then cover and dum for 10-12 minutes by keeping a old tawa underneath on a very slow heat try to keep a bowl of water on top
* Once the time is over need to rest the pulao for 5 minutes Serve hot with raitha or any side dish

Simple tomato rice 🍅 recipe for lunchbox

INGREDIENTS
* Ponni Rice-2-3 cup (cooked)
* Sesame oil -5-10 Ml
* Mustard seeds-1/2 tsp
* Chana dal-1/2 tsp
* Urad dal-1/2 tsp
* Cashew-nut-8-10 piece
* Chopped green chilli-2 nos
* Curry leaves-1 sprig
* Chopped onions 🧅-1 medium sized
* Chopped tomatoes 🍅-2 medium sized
* Ginger garlic paste-1 tsp
* Salt
* Turmeric powder-1/4 tsp
* Kashmiri chilli powder-1 tsp
* Chopped coriander leaves for garnish

METHOD

* Heat sesame oil crackle mustard seeds and add the following chana dal/urad dal/cashew nut /green chilli and curry leaves and sauté
* Add chopped onions and sauté till it turns brown and add ginger garlic paste once the raw flavour is gone l
* Add chopped tomatoes and sufficient salt cook once the tomatoes start to getting cooked add turmeric and chilli powder sauté till the raw flavour disappears then add little water and cover and cook for 3-4 minutes on a slow fire once everything is cooked
* Turn of the flame and add the boiled rice and start mixing the rice gently so the rice grains are not broken
* Garnish with chopped coriander leaves And our tomatoes rice is ready
* Serve hot

Kerala style chicken roast 😋

This can be eaten with rice and chapathi or any breads of your preference

INGREDIENTS
* Chicken leg boneless-300 gms
* Coconut oil/sesame oil-10 ml
* Julienne Ginger - thumb size
* Julienne garlic 🧄-3-4 cloves
* Curry leaves 🍃 -1 sprig
* Sliced Green chillies -1 nos
* Shallot’s -8-10 nos
* Sliced onions 🧅- 1 small
* Sliced tomato 🍅-1 small
* Salt 🧂 -to taste
* Turmeric powder- 1/2 tsp
* Kashmiri chilli powder-1 tsp
* Coriander powder-1.5 tsp
* Pepper powder-1 tsp
* Garam masala- 1 tsp
* Coconut slivers

METHOD

* Marinate the chicken with salt 🧂,chilli powder and turmeric powder rest it for 30 minutes
* In a kadai heat oil and crackle mustard seeds followed by julienne of ginger and garlic 🧄 and sliced green chilli with coconut slivers and curry leaves and sauté
* Then Add shallots and sliced onions on a slow heat sauté till the onions caramelise then season it with salt and chilli/turmeric and coriander powder sauté till the raw flavour goes
* Now add tomato 🍅 and cook for a minute then add cup of water cook the masala for 3-4 minutes the add the marinated chicken along with pepper powder and garam masala and mix
* When the masala is mixed completely cover and cook for 6-7 minutes on a slow heat in between open and stir to prevent the chicken getting burnt
* When the chicken is cooked dry up the masala to your preferred consistency
* Serve hot

Pepper and chilli prawns 🦐🌶️

This is a fantastic side dish recipe

INGREDIENTS
* Prawns p-150 gms
* Green capsicum -half
* Onions -small sized
* Salt -to taste
* Pepper -2 tsp
* Sugar-1/4 tsp
* Chopped Garlic -3 cloves
* Sliced green chilli-1 nos
* Cooked chilli paste -1 tsp
* oil-15 ml
* Dark soya sauce-1/4 tsp
* Tomato sauce -1 tsp
* Chopped spring onions

For prawns marination
* Corn flour
* Ginger garlic paste
* Salt
* Pepper

METHOD

* Marinate the prawns and set aside
* In a pan add oil once the oil is hot shallow fry the prawns along with onions and capsicum once fried remove them in a separate bowl
* In the same pan add chopped garlic and sauté then green chilli and add little water to deglaze the pan
* Now add chilli paste followed by dar soy sauce and tomato sauce season them with salt/pepper and sugar bring back the fried prawns
* Increase the heat and toss them once the sauce is coated nicely Finish it with spring onions
* This is a fantastic side dish

Simple lunch box recipe

Coimbatore special arisi paruppu sadham

INGREDIENTS:
* Ponni rice -1 cup
* Toor dal -1/2 cup
* Ghee -2 tbsp
* Oil-5 ml
* Mustard seeds-1/2 tsp
* Cumin seess-1/2 tsp
* Urad dal-1/2 tsp
* Chana dal-1/2 tsp
* Dried red chilli-1 nos
* Crushed garlic-5-6 nos
* Green chilli-2 nos
* Shallots -10-15 nos
* Curry leaves 🍃-1 sprig
* Tomatoes -1 medium sized
* Salt to taste
* Turmeric powder-1/2 tsp
* Pepper and cumin powder-1 tsp
* Hing powder-1/4 tsp
* Chopped coriander leaves 🍃
* Water- 1.5 cup rice and dal -3 cup of water

METHOD
* Wash and soak the rice and dal together for 30 minutes
* Roast the pepper and cumin and powder them
* In a pressure cooker heat ghee and oil together then add mustard/cumin/urad dal/ chana dal and dried red chilli followed by crushed garlic and green chilli and sauté
* Then add curry leaves and shallots and sauté till its become wilted the add tomatoes 🍅 and sauté by adding sufficient salt
* Once the tomatoes are cooked add turmeric/cumin and pepper powder along with hing and sauté
* At this stage add the measured water for 1.5 glass of rice and dal i have used 3 glass of water then add the strained rice to the cooker and mix
* Check for seasoning if required add salt now cover and pressure cook for 3 whistles once the pressure is gone finish it with chopped coriander and ghee
* Serve hot with you Favourite side dish or have as it is.
