🍗 Yellow Chicken Rice Recipe
Ingredients (Serves 4)
For the Chicken Marinade:
500 g chicken (bone-in or boneless, cut into pieces)
1 tsp turmeric powder
1 tsp ginger-garlic paste
1 tsp red chili powder (optional for spice)
1 tbsp lemon juice
Salt to taste
For the Rice:
2 cups basmati rice (washed & soaked 20 minutes)
3 tbsp oil or ghee
1 medium onion (sliced thinly)
2 green chilies (slit, optional)
1 tsp cumin seeds
2–3 cloves
2–3 green cardamoms
1-inch cinnamon stick
1 bay leaf
1 tsp turmeric powder
1 tsp coriander powder
1 tsp garam masala (optional)
4 cups chicken stock or water
Fresh coriander & mint leaves for garnish
Method
1. Marinate the Chicken
Mix chicken with turmeric, ginger-garlic paste, chili powder, lemon juice, and salt.
Let it rest for at least 30 minutes.
2. Prepare the Base
Heat oil or ghee in a deep pan.
Add cumin, cloves, cardamoms, cinnamon, and bay leaf. Fry until aromatic.
Add sliced onions and sauté until golden brown.
3. Cook the Chicken
Add marinated chicken to the pan.
Cook on medium flame until chicken turns white and slightly browned.
Add coriander powder, turmeric, and garam masala. Mix well.
4. Add Rice & Stock
Drain soaked rice and add to the pan. Gently stir for 1–2 minutes.
Pour in chicken stock or water (ratio 1 cup rice : 2 cups liquid).
Add green chilies and salt if needed.
5. Cook Until Done
Cover with a lid and cook on low heat for 15–20 minutes until rice is fluffy and chicken is tender.
Switch off heat and let it rest for 10 minutes without opening the lid.
6. Garnish & Serve
Fluff the rice gently with a fork.
Garnish with fresh coriander and mint leaves
