Protein Power Laddus ✨🌻

Support healthy hair & skin, bone health, gut health, heart health and energy levels. The combination of protein, fibre and good fats also makes them a satisfying snack.

For women with PCOS, these can be included as part of a balanced diet, with portion control. 🀎

Dadi Ke Winter Power Laddus β€” Recipe

Ingredients:

* Makhana – 1Β½ cups
* Almonds – 1 cup
* Cashews – Β½ cup
* Walnuts – ΒΌ cup
* Pistachios – ΒΌ cup
* Pumpkin seeds – ΒΌ cup
* Sunflower seeds – ΒΌ cup
* Sesame seeds – 2 tbsp
* Ramtil/Niger seeds – 2 tbsp
* Poppy seeds – 1 tbsp
* Green raisins – Β½ cup
* Black raisins – Β½ cup
* Dates – 1 cup, deseeded
* Ghee – 2 tbsp + extra if required

Method

1. Roast makhana in 1 tbsp ghee until crisp.
2. Separately dry-roast the almonds, cashews, walnuts, pistachios and all the seeds until fragrant. Don’t over-roast the seeds.
3. Let everything cool slightly, then grind coarsely. Don’t make it into a fine powder.
4. Heat 1 tbsp ghee, add the dates and both raisins and cook on low heat until they soften and become sticky.
5. Add the ground nuts and seeds and mix really well.
6. If the mixture feels too dry to bind, add 1–2 tsp warm ghee at a time.
7. While still warm, shape into laddus.

Storage

Cool completely before storing. Keep them in a clean, completely dry airtight glass container.

* Refrigerator: about 3–4 weeks for best quality.
* Room temperature: I’d recommend 7–10 days, especially in a warm/humid climate.
* Freezer: around 2–3 months; thaw at room temperature before eating.

And make sure you use completely dry spoons/hands when taking them out. Moisture is what we really don’t want getting into the jar.

🌢️ Nepali Soya Ko Achar ✨

Makes 1 medium-large jar

Main ingredients

* Soya chunks β€” 250 g
* Peanuts β€” 100 g
* Garlic β€” 15-16 cloves
* Ginger β€” 3 inch
* Green chillies β€” 4–5
* Mustard oil β€” for frying + finishing
* Lemon juice β€” 4 tbsp
* Salt β€” 2 tsp, or to taste

Whole spice mix

* Coriander seeds β€” 2 tbsp
* Cumin seeds β€” 1Β½ tbsp
* Fennel seeds (saunf) β€” 1 tbsp
* Yellow mustard seeds β€” 1 tsp
* Black mustard seeds β€” 1 tsp
* Kalonji β€” 1 tsp
* Sesame seeds β€” 2 tbsp
* Dried red chillies β€” 8–10
* Black peppercorns β€” 1 tsp
* Fenugreek seeds (methi) β€” Β½ tsp
* Timur/Sichuan pepper β€” 1 tsp, if using

Method

1. Prepare the soya
Boil the soya chunks until soft. Drain, rinse and squeeze them extremely well. Let them sit for a few minutes and squeeze againβ€”you want as little moisture as possible.

2. Make the spice mix
Dry-roast coriander, cumin, fennel, dried red chillies, black pepper and methi. Add the sesame towards the end. Cool and grind everything coarsely.

Keep the mustard seeds and kalonji relatively intact rather than grinding them completely.

3. Fry everything in mustard oil
Heat mustard oil until it reaches the smoking point, then lower the heat.

Fry the garlic, ginger and green chillies until golden and slightly crisp. Remove.

Then fry the soya chunks in batches until properly golden and crisp.

Finally, fry the peanuts until golden.

4. Bring the achar together
In a large bowl, combine the fried soya, peanuts, fried garlic, ginger and chillies.

Add the coarse roasted spice powder, yellow mustard seeds, black mustard seeds and kalonji.

Then add:

* 4 tbsp lemon juice
* Salt
* About 2–3 tbsp of the mustard oil left from frying

Toss everything really well.
