Shahi Bottle Gaurd Phirni

Ingredients

2 medium size bottle gaurd
1 litre milk
Half cup soaked rice
2 tsp sugar or to taste
1.5 tbsp condensed milk
Half tsp cardamom powder
1 tsp rose water
Half cup sugar
1/4 cup of water
For decoration
Few pudina leaves
Cherries
Granola mixture 2 cup

Method

Peel and blanch 1 bottle gaurd and grind it to make a smooth paste

Grind the soaked rice coarsely

Boil the milk and simmer the flame add rice paste and stir continuously so that it should not burn. Cook for 15 to 20 minutes

Now add sugar, cardamom powder, bottle gaurd puree and condensed milk.

Mix properly and cook on slow flame. When it thickens , cover with a lid and keep it in the fridge.

Now take another bottle gaurd. Peel and get julians.

Wash them, heat a pan add sugar and water. When it starts giving bubbles add bottle gaurd julians.

Cook until thickens, try to keep them separate with the help of a fork.

Now take a glass add granola mixture then bottle gaurd phirni then again granola then phirni and finally decorate with bottle gaurd ready latccha

At the top put pudina leaves and cherry.

Now you Royal and Healthy Bottle Gaurd Phirni is ready to enjoy!

" Kapoor Kand"
This is a traditional healthy festive sweet prepared with Bottle gourd . We can say it ,
Kapoor kund or (lauki Gulab sweet lachha)

Ingredients-1 medium sized white pumpkin
1 cup powdered sugar
Crushed cardamom
Fresh rose petals
Rose extract
½ cup boora(tagar) to coat
1/2tsp rose water
rose petals
Method -Peal pumpkin (Lauki) and then make Lachcha with julienne peeler in long juliennes . Keep them in water.

Remove white pumpkin juliennes (lachha )from water and add to a kadhai with powdered sugar .

Mix it well and cook it at slow flame Covered . cook on slow flame for 5 minutes.

Remove the lid, and add ,crushed cardamom and fresh rose .Cook it till lachcha becomes transparent. You can see it by holding it with spoon.

Let all sugar coat on white pumpkin juliennes by cooking it.

Mix rose water in prepared white pumpkin juliennes for flavor .

Besan- 1/4 cup
Green chilli- 1
Salt to taste
Garam masala- 1 tsp

Cream- 1/4 cup

लौकी के लड्डू (Lauki ke Laddu
सामग्री
1 कप कसी लौकी
1/2कप चीनी
1 टेबल स्पून घी
1 कप नारियल घिसा हुआ

तरीका
एक कड़ाही में कसी लौकी को डालकर हल्के हाथ से चलाएं और ढक कर 10 मिनट के लिए पकाएं
10 मिनट बाद फिर से चलकर 10 मिनट के लिए ढक दें
अब घी डालकर अच्छे से मिलाएं
अब चीनी डालें और मिला दें
अब घिसा हुआ नारियल डालकर मिलाएं और 2 मिनट भूनें गैस बंद कर दें
ठंडा होने पर लड्डू बना लें or
लौकी के लड्डू तैयार हैं
