Vrat Ki Shakarkandi Kuttu Sago Tikki | Buckwheat, Sweet Potatoes and Tapioca Croquettes Recipe!!
Ingredients:

2 medium Shakarkandi (Sweet Potatoes) – boiled & mashed

½ cup Sabudana (Sago) – soaked for 3-4 hours

3 tbsp Kuttu ka Atta (Buckwheat Flour)

2 Green Chilies – finely chopped

1 tsp Ginger – grated

1 tbsp Fresh Coriander Leaves – chopped

½ tsp Black Pepper Powder

Sendha Namak (Rock Salt) – as per taste

2 tsp Lemon Juice

Oil or Ghee – for shallow frying

🥣 Method:

1- Prepare the Mix

In a mixing bowl, add mashed sweet potatoes, soaked sabudana, and kuttu atta.

Mix well to form a binding dough.

2- Add Flavors

Add green chili, ginger, coriander, black pepper, sendha namak, and lemon juice.

Knead everything together.

3- Shape the Tikkis

Grease your palms and shape the mixture into medium-sized tikkis/patties.

4- Shallow Fry

Heat oil or ghee in a pan.

Place tikkis and cook on medium flame until golden brown and crispy from both sides.

5- Serve Hot

Serve with vrat wali green chutney or plain curd.

🌸 Instant Vrat Idli Recipe (Falahari Idli)
Ingredients:

1 cup Samak ke Chawal (Barnyard millet / Sama rice) flour

2 tbsp Sabudana (sago) flour/powder (optional for softness)

½ cup Curd (preferably falahari curd)

1 tsp Sendha Namak (rock salt)

1 tsp Green chili & ginger paste (optional)

1 tbsp Chopped coriander

½ tsp Black pepper powder

1 tsp Ghee or oil

½ tsp Eno fruit salt (or ½ tsp baking soda + 1 tsp lemon juice)

Water as needed

Method:

1- Prepare batter – In a bowl, mix sama rice flour, sabudana flour, curd, salt, black pepper, ginger-chili paste, and coriander.

2- Add little water and make a smooth batter (like regular idli batter – medium thick). Rest for 5 minutes.

3- Grease idli moulds with ghee/oil.

4- Just before steaming, add Eno fruit salt to the batter and mix gently. Batter will turn fluffy.

5- Immediately pour into moulds.

6- Steam for 10–12 minutes on medium flame.

7- Cool slightly, then unmould carefully.

✨ Quick Tip: You can also add grated lauki (bottle gourd) or boiled potato to the batter for a variation.

Falahari Dahi Bhalla Recipe 👇👇
🛒 Ingredients:

For Bhallas:

1 cup Samak ke chawal (Barnyard millet) – soaked for 2-3 hrs

2 tbsp Singhara atta (Water chestnut flour) or Rajgira atta

Sendha namak – as per taste

1–2 green chilies (finely chopped, optional if fasting rules allow)

1 tsp ginger paste (optional)

Oil or ghee – for frying

For Serving:

2 cups fresh curd (whisked)

Sendha namak – as per taste

1 tsp roasted cumin powder

1 tsp black pepper powder

1 tsp red chili powder (if allowed)

Coriander leaves & pomegranate seeds – for garnish

🥣 Method:

1. Prepare Bhalla Batter

Drain soaked samak rice and grind it into a smooth paste.

Add singhara/rajgira atta, green chili, ginger, and sendha namak.

Mix well to form a thick batter.

2. Fry Bhallas

Heat ghee/oil in a kadhai.

Drop small portions of batter using wet hands or a spoon.

Fry until golden and crisp.

Soak fried bhallas in lukewarm water for 10 minutes, then gently press to remove excess water.

3. Prepare Yogurt Mixture

Whisk curd till smooth, add sendha namak, cumin powder, and pepper.

4. Assemble Dahi Bhallas

Place soaked bhallas in a serving bowl.

Pour curd over them generously.

Sprinkle cumin powder, pepper, and red chili powder.

Garnish with coriander leaves & pomegranate seeds.

Dahi Shimla Mirch Sabzi – Recipe
This is a simple, delicious dish made with yogurt (dahi) and bell peppers (shimla mirch). It's light, healthy, and perfect for everyday meals. Here’s how you can make it:
✅ Ingredients

Bell peppers – 2 medium-sized (use red, yellow, green, or a mix)

Yogurt – 1 cup (well whisked)

Oil – 1½ tbsp

Cumin seeds – ½ tsp

Asafoetida (hing) – a pinch

Ginger – 1 inch piece (grated)

Green chili – 1 finely chopped

Turmeric powder – ½ tsp

Coriander powder – 1 tsp

Red chili powder – ½ tsp (adjust to taste)

Garam masala – ½ tsp

Salt – to taste

Kasuri methi (dried fenugreek leaves) – 1 tsp (optional)

Fresh coriander leaves – for garnish

✅ Instructions

1- Prepare the Bell Peppers

– Wash and cut the bell peppers into strips or small pieces.

2- Make the Tempering

– Heat oil in a pan. Add cumin seeds and let them splutter.
– Add hing and grated ginger, sauté briefly.
– Add chopped green chili and cook for 30 seconds.

3- Add the Spices

– Add turmeric, coriander powder, and red chili powder.
– Sprinkle a little water to prevent the spices from burning.

4- Cook the Bell Peppers

– Add the chopped bell peppers and cook for 2–3 minutes.
– Add salt.

5- Add the Yogurt

– Reduce the heat to low.
– Gradually add the whisked yogurt while stirring continuously to prevent curdling.
– Add a little water if needed to adjust the consistency.

6- Simmer

– Cover and cook on low heat for 5–7 minutes until the bell peppers are tender.

7- Finish the Dish

– Add garam masala and kasuri methi. Mix well.
– Garnish with fresh coriander leaves.

Ingredients:

🌺 For the Omelette:

4 eggs

1 small onion, finely chopped

1 green chili, finely chopped

1 tbsp coriander leaves, chopped

Salt, as needed

1/4 tsp black pepper

1/4 tsp turmeric powder

1 tbsp oil or ghee

🌺 For the Curry:

2 tbsp oil

1 onion, finely chopped

2 tomatoes, finely chopped

1 tsp ginger-garlic paste

1/2 tsp turmeric powder

1 tsp red chili powder

1 tsp coriander powder

1/2 tsp garam masala

Salt, as needed

1 cup water

Fresh coriander leaves for garnish

Step 1 – Make the Omelette:

Beat the eggs in a bowl.

Add chopped onion, green chili, coriander leaves, turmeric, pepper, and salt.

Heat oil in a pan and pour the egg mixture.

Cook on medium heat until both sides are done. Remove and cut into halves or squares.

Step 2 – Make the Curry:

Heat oil in a pan.

Add onions and sauté until golden brown.

Add ginger-garlic paste and cook for 1 minute.

Add tomatoes, turmeric, chili powder, coriander powder, and salt. Cook until tomatoes soften.

Add water and bring to a simmer.

Add the omelette pieces into the gravy.

Sprinkle garam masala and let it cook for 5–7 minutes until the flavors blend.

Garnish with coriander leaves.

🥟 बिना मैदे के ताकतवर मोमोज़ 👇👇

🌿 सामग्री (4 लोगों के लिए)

आटा (कवर के लिए):
• गेहूँ का आटा – 1 कप
• सूजी – ½ कप
• बेसन या रागी आटा – 2 बड़े चम्मच
• नमक – स्वादानुसार
• तेल – 1 छोटा चम्मच

भरावन (स्टफिंग):
• पनीर – ½ कप (कद्दूकस किया हुआ)
• सोया ग्रैन्यूल्स – ½ कप (भीगाकर निचोड़ा हुआ)
• गाजर – ½ कप (बारीक कटी)
• पत्ता गोभी – ½ कप (बारीक कटी)
• प्याज़ – 1 (बारीक कटा)
• अदरक-लहसुन पेस्ट – 1 छोटा चम्मच
• हरी मिर्च – 1 (बारीक कटी)
• काली मिर्च पाउडर – ½ छोटा चम्मच
• सोया सॉस – 1 छोटा चम्मच
• नमक – स्वादानुसार
• हरा धनिया – 2 बड़े चम्मच



📝 विधि

1. आटा गूंथना
• गेहूँ का आटा, सूजी, बेसन/रागी आटा, नमक और तेल डालकर गूंथ लें।
• मुलायम आटा बने तो उसे गीले कपड़े से ढककर 20 मिनट रख दें।

2. भरावन बनाना
• पैन में 1 छोटा चम्मच तेल गरम करें।
• अदरक-लहसुन पेस्ट और प्याज़ डालकर सुनहरा होने तक भूनें।
• अब गाजर, पत्ता गोभी, सोया ग्रैन्यूल्स डालें और 2-3 मिनट चलाएँ।
• पनीर, काली मिर्च, सोया सॉस, नमक डालकर अच्छी तरह मिलाएँ।
• अंत में हरा धनिया डालकर गैस बंद कर दें।

3. मोमोज़ बनाना
• आटे की छोटी लोइयाँ बेलकर पतली पूड़ियाँ बनाएँ।
• बीच में स्टफिंग रखकर मोमोज़ का शेप दें।
• स्टीमर में 12–15 मिनट तक पकाएँ।



🍲 परोसने का तरीका
• हरी चटनी या लहसुन-टमाटर वाली तीखी चटनी के साथ परोसें।
• चाहें तो ऊपर से हल्का सा घी या बटर ब्रश कर दें → मोमोज़ और ताकतवर हो जाएँगे।

Ingredients:

🌺 For Soya Balls:

Soya chunks – 1 cup

Cornflour – 2 tbsp

All-purpose flour (Maida) – 2 tbsp

Ginger-garlic paste – 1 tsp

Green chili – 1 (finely chopped)

Black pepper powder – ½ tsp

Salt – to taste

Oil – for frying

🌺 For Dry Sauce:

Oil – 2 tbsp

Garlic – 6 cloves (finely chopped)

Ginger – 1 tsp (finely chopped)

Green chili – 1 (slit or chopped)

Onion – 1 medium (diced)

Capsicum – 1 (diced)

Soy sauce – 1 tbsp

Tomato ketchup – 1 tbsp

Red chili sauce – 1 tbsp

Vinegar – ½ tsp

Black pepper – ½ tsp

Salt – to taste

Spring onion greens – for garnish

Method:

Step 1: Make Soya Balls

Soak soya chunks in hot water for 15–20 minutes, squeeze out excess water.

Grind/chop finely and mix with cornflour, maida, ginger-garlic paste, green chili, pepper, and salt.

Shape into small balls and deep/shallow fry till golden brown & crispy. Keep aside.

Step 2: Prepare Dry Sauce

Heat oil in a wok, add chopped garlic, ginger & green chili. Stir-fry on high flame.

Add diced onion & capsicum, sauté for 1–2 minutes (keep them crunchy).

Add soy sauce, ketchup, chili sauce, vinegar, pepper, and salt. Mix well.

Step 3: Toss & Serve

Add the fried soya balls, toss on high flame until they are coated well with the sauce.

Garnish with spring onion greens.

Homemade Strawberry Sponge Cake Recipe 🍰🍓

Ingredients:

For the Sponge Cake:

1 cup (120g) all-purpose flour

1 cup (200g) sugar

4 large eggs (room temperature)

1 tsp vanilla extract

½ tsp baking powder

2 tbsp milk (warm)

2 tbsp butter (melted)

For the Filling & Topping:

1 cup fresh strawberries (sliced)

1 cup heavy cream (chilled)

2 tbsp powdered sugar

½ tsp vanilla extract

Instructions:

1. Prepare the Sponge Cake:

Preheat oven to 180°C (350°F). Grease and line a round cake tin.

In a bowl, beat eggs and sugar with an electric be**er until pale, thick, and fluffy (about 5–7 mins).

Add vanilla extract and mix gently.

Sift flour and baking powder, then fold into the egg mixture carefully (do not overmix).

Mix warm milk and melted butter, fold gently into the batter.

Pour into the tin and bake for 25–30 minutes, or until a toothpick comes out clean.

Cool completely, then slice the cake into two layers.

2. Prepare the Cream:

Whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

3. Assemble the Cake:

Place one cake layer on a plate, spread whipped cream, and add strawberry slices.

Place the second cake layer on top, cover with cream, and decorate with fresh strawberries.

🌶️🍅 Tamatar ki Chaat Recipe (Banarasi Style) 🍅🌶️
🥗 Ingredients:

4 medium tomatoes (finely chopped)

1 tbsp oil or ghee

1 tsp cumin seeds

1 tsp ginger paste

2–3 green chilies (chopped)

½ tsp turmeric powder

1 tsp red chili powder

1 tsp coriander powder

½ tsp garam masala

1 tbsp jaggery (or sugar, as per taste)

1 tsp black salt

1 tbsp tamarind pulp

1 tbsp boiled potatoes (mashed)

¼ cup water (to adjust consistency)

Sev, papdi, chopped onions, coriander leaves, and lemon juice for garnish

👩‍🍳 Method:

1- Heat oil/ghee in a pan, add cumin seeds and let them splutter.

2- Add ginger paste, green chilies, and sauté for 30 seconds.

3- Add chopped tomatoes and cook until soft and mushy.

4- Mix in turmeric, red chili powder, coriander powder, and salt.

5- Add jaggery and tamarind pulp for that tangy-sweet taste.

6- Stir in mashed boiled potatoes for thickness.

7- Simmer with little water for 3–4 minutes until thick and aromatic.

8- Transfer to a bowl, top with sev, papdi, onions, coriander, and a squeeze of lemon juice.

Homemade Moong Sprouts recipe 🌱
🥗 Ingredients:

1 cup whole green moong dal (sabut moong)

Water (for soaking & rinsing)

Clean cotton cloth / muslin cloth OR sprout maker

👩‍🍳 Method:

Step 1 – Wash & Soak:-

Wash moong dal 2–3 times in clean water.

Soak in enough water for 8–10 hours or overnight.

Step 2 – Drain & Wrap:-

Next morning, drain water completely.

Place soaked moong in a clean muslin cloth/cotton cloth, tie loosely, and keep in a warm place.
(If using sprout maker, just transfer moong in it and cover.)

Step 3 – Sprouting:-

After 12–18 hours, you will see small sprouts.

For longer sprouts, keep for 24–36 hours, sprinkling little water in between if they look dry.

🌿 Ready to Use!:-

You can now use sprouts in:

Salads 🥗 (add onion, tomato, cucumber, lemon)

Stir-fry / sauté with spices 🍲

Add to soups, dosas, cheelas, or pulao

Diabetic-Friendly Jalebi Recipe You Must Love it...
Ingredients (सामग्री):

Besan (Gram Flour) – ½ cup

Whole Wheat Flour (Aata) – ½ cup

Curd (Dahi, low-fat) – 2 tbsp

Baking Powder – ½ tsp

Baking Soda – 1 pinch

Olive Oil / Cold Pressed Oil – for frying

Stevia / Erythritol / Monk Fruit Sweetener – ½ cup (apni taste ke hisaab se)

Water – as needed

Cardamom Powder – ¼ tsp

Saffron (Kesar) – few strands (optional)

Method (विधि):

1- Batter Banana:-

Besan + aata + curd + thoda pani mila kar smooth batter banayein.

Isme baking soda aur baking powder dal kar 30 min ke liye rest kar dein.

2- Sugar-Free Syrup (Chashni)

½ cup stevia / erythritol ko ½ cup paani mein garam karke dissolve kar lein.

Cardamom powder aur kesar daal kar halka thoda thick hone dein.

3- Jalebi Banana

Batter ko ek piping bag ya clean plastic bottle mein daalein.

Pan mein olive oil garam karein (zyada high heat na ho).

Jalebi shapes banakar golden brown hone tak fry karein.

4- Soak Karna

Fry karte hi turant sugar-free syrup mein 1–2 min dip karein.

5- Serve

Garma-garam sugar-free jalebi taiyaar hai.

Tips for Diabetic Patients:

Stevia / Erythritol ka use karein, kabhi bhi normal chini (sugar) na daalein.

Fry karne ke liye olive oil ya rice bran oil behtareen rahega.

Portion control zaroor rakhein (2–3 jalebi se jyada ek baar mein na khayein).

🥥 Malai Modak Recipe 😍😍
Ingredients:

Paneer (cottage cheese) – 1 cup (grated or crumbled)

Mawa/Khoya – 1 cup

Condensed milk – ½ cup

Fresh cream – 2 tbsp

Cardamom powder – ½ tsp

Powdered sugar – 2 tbsp (optional, adjust to taste)

Chopped dry fruits (pistachio, almonds, cashew) – 2 tbsp

Ghee – 1 tsp

Method:

1- Heat a pan and add mawa. Cook on low flame for 2–3 minutes until soft.

2- Add paneer and mix well. Keep stirring on low flame.

3- Add condensed milk and cook until mixture thickens and leaves the sides of the pan.

4- Mix in fresh cream, cardamom powder, and powdered sugar. Cook for 1 more minute.

5- Turn off the flame and let the mixture cool slightly.

6- Grease modak moulds with ghee.

7- Fill with the mixture, press well, and gently unmould.

8- Garnish with chopped dry fruits.
