Recipe Summary
Prep time: 5 mins | Cook time: 5 mins | Serves: 1-2
Ingredients:
• Fresh Green Beans: 250g (ends trimmed and cut into halves)
• Garlic: 1 large bulb (crushed/minced)
• Sesame Seeds (Til): 1-2 tablespoons
• Soy Sauce: 1-2 teaspoons
• Oil: 1 tablespoon (Olive oil or Sesame oil preferred)
• Salt: For blanching
• Broccoli: (Optional, for extra crunch)
Instructions:
1. Blanch: Boil water with a pinch of salt. Add the beans (and broccoli if using) and cook on high heat for exactly 2 minutes.
2. Shock: Immediately drain and rinse under cold water to stop the cooking process. This preserves the “snap.”
3. Sauté Garlic: Heat oil in a pan. Add the crushed garlic and sauté until it turns golden brown and the raw smell disappears.
4. Add Crunch: Toss in the sesame seeds and fry until they start to pop.
5. Stir Fry: Add the blanched beans. Stir fry on high heat for 1-2 minutes.
6. The Finish: Pour in the soy sauce, toss well to coat, and serve hot!

Bengali Style Chicken & Mutton Paratha in Pune | Chhaya Paratha House Review

Today, I’m taking you to a legendary culinary landmark in Pimpri-Chinchwad—Chhaya Paratha House. Established in 1988, this place isn’t just about food; it’s about a legacy that has spanned nearly four decades.

Located right in Ajmera Complex, this spot is a massive favorite for the hardworking employees of Tata Motors and local students seeking that "homemade" taste. What makes it truly unique is the owner himself, who is originally from Bengali but brings a distinct Mumbai-style touch to his parathas.

What we ordered:
Veg Paratha Thali: You get to choose two parathas from their huge variety. I went with the classic Aloo and Gobi Parathas. They are served with Chole-aloo sabzi, fresh curd, mint chutney, and a dollop of butter.

Non-Veg Thali: This is where things get interesting! We tried the Chicken and Mutton Parathas. The fillings are generous and perfectly spiced, making it one of the few places in Pune where non-veg parathas are the star of the show.

More than just a restaurant:
During my visit, I witnessed something beautiful—a loyal customer who had moved away years ago but returned with his two daughters just to share the taste he grew up with. You can truly sense the long-term relationships and "vintage vibes" this place holds for the people of Pune.

Keema poori is one of the most popular breakfast you can get in Uttar Pradesh. Made from minced meat which can be of goat or chicken meat the dough made from all purpose flour is filled with the meat patty and rolled into a flat bread. This bread is then fried in piping hot msutard oil. It is served with dill chilli coriander chutney.

While it is not a healthy breakfast to have, but people of UP love to eat this in the chilly morning of December.

Sajao Dahi

Village life always has a way of bringing us back to our roots, reminding us of the beauty in simplicity. During my trip to my native village Ghosi Uttarpradesh in December, I tried something truly unique – Sajao Dahi.

Made with love and care, this curd is prepared in earthen pots, slow-cooked over cow dung cakes. The smoky aroma and earthy flavor take it to a whole new level of authenticity. No fancy garnishes, no frills – just the pure, unadulterated taste.

It’s amazing how something so simple can leave such a lasting impression. Have you ever tasted curd like this before?

While strolling through a market in a village in Uttar Pradesh, India, I came across a food cart making Puri from scratch. Even the rice, which forms the base of Bhel Puri, was being freshly puffed. The vendor started by adding raw grains, chana, matar, and other ingredients into hot salt. It was truly satisfying to watch the rice transform into puffed rice. The excess salt was then carefully removed using a strainer. The final dish, served with flavorful chutneys, tasted absolutely delicious.

I usually avoid discussing political matters because I understand that everyone has different opinions, and I genuinely respect that. However, when something affects our daily lives, I feel compelled to speak out. With the following I have, perhaps we can make a positive impact together.

I want to talk about the roads in the PCMC area, especially in Pune, Ravet, and Tathawade. We all know how terrible the road conditions are, particularly during this monsoon. Even when it wasn’t raining, the roads were riddled with potholes. It’s not just the service roads that are in bad shape; even the highways are filled with potholes, which can be dangerous when driving at high speeds.

The people who are suffering the most are those living in the Pune area, especially near the Pune underpass. Every single day, regardless of whether it’s raining, Monday, or Sunday, the traffic here is unbearable. What should be a five-minute drive through the underpass can easily take anywhere from 25 to 50 minutes. This is mainly due to the poor quality of the roads and the narrow underpass.

But today, it wasn’t just the underpass; the entire service road was choked with traffic from Mukai Chowk to Wakad. The service road is in desperate need of repair.

Why am I raising this issue? Because it’s impacting our lives. It’s one thing if you’re heading out for fun, but what happens during an emergency? Last year, when we had a baby, I was constantly worried that if we had to rush to the hospital during the afternoon, we wouldn’t make it in time.

It’s high time we raise this issue. We need to tweet and tag the ministers on social media and file complaints through the PCMC Sarthi app. Remember, the service road falls under the National Highway Authority of India, so this needs to be reported to NHAI. Since Nitin Gadkari ji has already addressed this issue, we should continue to push until it gets resolved.
