Spring Rolls Recipe

Ingredients
For the Filling
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1 cup bean sprouts
- 1/2 cup thinly sliced bell peppers (any color)
- 1/2 cup thinly sliced mushrooms
- 1/4 cup thinly sliced green onions
- 2 cloves garlic (minced)
- 1 cup sweet corn kernels (fresh, canned, or frozen)
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Vegetable oil for frying

For the Wrapper
- Spring roll wrappers ( grocery stores)or you check my page for recipe
- A small bowl of water (for sealing the wrappers)

Instructions
In a large skillet or wok, heat a small amount of vegetable oil over medium-high heat. Add the minced garlic and cook for about 30 seconds until fragrant.

Add the shredded cabbage, carrots, bean sprouts, bell peppers, mushrooms, green onions, and sweet corn to the skillet. Stir-fry the vegetables for about 3-4 minutes until they are slightly softened but still crisp.

Add the soy sauce, oyster sauce (if using), sesame oil, salt, and pepper to the vegetables. Stir to combine and cook for another minute. Remove the skillet from heat and let the filling cool.

Take one spring roll wrapper and place it on a clean surface with one corner facing you (like a diamond shape). Spoon about 2 tablespoons of the filling onto the lower part of the wrapper.

Fold the bottom corner of the wrapper over the filling, then fold in the left and right corners. Roll the wrapper tightly towards the top corner. Use a little water to seal the edges.

Repeat the process with the remaining wrappers and filling.

In a large skillet or deep fryer, heat vegetable oil to 350°F (175°C). There should be enough oil to submerge the spring rolls.

Fry the spring rolls in batches, being careful not to overcrowd the skillet or fryer. Fry for about 3-4 minutes, or until the spring rolls are golden brown and crispy.

Use a slotted spoon to remove the spring rolls from the oil and place them on a paper towel-lined plate to drain excess oil.

Serve the spring rolls hot with your favorite dipping sauce, such as sweet chili sauce or soy sauce.

Crispy Egg Biscuits

INGREDIENT:

5 Tbsp unsalted butter, at room temperature
1 cup icing sugar, sifted
3 large egg whites
1 tsp vanilla extract
2/3 cup all-purpose flour
(plain flour)

INSTRUCTIONS:-

1. Preheat the oven to 350°F (180°C) and line 2 baking trays with parchment paper.
2. Using a stand mixer fitted with the paddle attachment or electric beaters, beat the butter and icing sugar until smooth.
3. Whisk the egg whites to loosen, then add half of the egg whites and vanilla to the butter mixture, beating well. Scrape down the sides of the bowl.
4. Add half of the flour, beat, and scrape the bowl well.
5. Add the remaining egg whites, beat well, then add the remaining flour and beat until smooth.
6. Spoon the batter into a large piping bag fitted with a medium plain tip and pipe the batter onto the parchment-lined baking trays.
7. Bake for about 10 minutes, until the cookies brown at the edges.
8. Cool the cookies on the parchment for a minute, then transfer them to a cooling rack to cool completely.

EGG ROLL RECIPE

Ingredients
2 Cups Flour
1 Egg
1 Tsp Baking powder
1/4 Tsp Salt
1/2 Tsp Nutmeg
2 Tbsp Margarine
8-9 Tbsp Water
5 Eggs Boiled
2 Tbsp Sugar

Procedure
In a large bowl, mix together the Flour, Baking powder, Salt, Sugar and Nutmeg.

Use your fingers to blend the Margarine into the flour until it’s crumbly.

Add the beaten egg and mix together. The dough should look dry at this point.

Begin to introduce the water a little at a time and work the dough till dough is soft and sticky but still workable.
work the dough for about a minute then cover it and let it rest for about 15 to 20 minutes.

Work the dough again for a couple of seconds to a minute and divide it into 5.

Tightly wrap each of the dough around each Egg.

Fry on a medium heat turning over and over again until it’s golden brown.

Serve your Egg Roll hot or warm.
