Garlic Lemon Shrimp Pasta Recipe 🍤🍋
Ingredients:
12 oz (340 g) spaghetti 🍝
1/2 lb (225 g) shrimp, peeled and deveined 🍤
3 cloves garlic, minced 🧄
Zest and juice of 1 lemon 🍋
1/4 cup olive oil 🫒
1/4 cup grated Parmesan cheese 🧀
1/4 cup breadcrumbs (optional)
1/4 tsp crushed red pepper flakes (optional) 🌶️
Salt and black pepper to taste 🧂
Fresh parsley for garnish 🌿
Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
Prepare the Breadcrumb Topping (Optional):
Heat 1 tbsp of olive oil in a small pan over medium heat. Add breadcrumbs and toast until golden brown. Set aside.
Cook the Shrimp:
In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the shrimp and cook for 2-3 minutes per side, or until pink and fully cooked. Remove the shrimp and set aside.
Make the Sauce:
In the same skillet, add the lemon zest, lemon juice, crushed red pepper flakes (if using), and the remaining olive oil. Stir well and simmer for 2 minutes.
Combine Everything:
Add the cooked spaghetti to the skillet, tossing to coat it in the lemon garlic sauce. Add the shrimp back in, and mix well. If the pasta seems dry, add some reserved pasta water a little at a time.
Serve:
Plate the pasta and top with Parmesan cheese, toasted breadcrumbs (if using), and fresh parsley. Serve warm and enjoy! 🌟
