Ragda aloo tikki chaat
Ingredients:
500 gm safed matar (chole wali matar)
1 tsp namak
1/2 tsp haldi powder
3 tsp sabut dhaniya
6-7 sabut laal mirch
1 tsp jeera
2 tbs oil
1 inch adhrakh (grated)
7-8 hari mirch (crushed)
2 medium size tamater (chopped)
20-25 gm imlie (soaked)
4 bade size aloo (boiled)
3 tsp cornstarch
4-5 tbs oil
Recipe :
Pehle soaked matar ko cooker me dale 2 glass pani dale namak aur haldi powder dal kar seeti laga kar 3-4 seeti ane tak pakaye jab tak matar pak rahi hai tab tak ragda ke liye masala bana le jiske liye ek pan me sabut dhaniya sabut laal mirch aur jeera dal kar dheemi anch par bhun le jab tak achhi si khushbu na aye fir thanda karke dardara sa grind kar le phir ek kadhai me oil dale aur phir grate kiya hua adrakh dale thoda sa bhune phir crush ki huyi hari mirch dale phir tamater dal ke galne tak paka le phir tayar kiya hua masala dale haldi powder aur namak dal kar low flame per dhak kar 10 min pakaye phir pakaye huwe matar ko dale phir imlie ka pani dale agar pani ki zarurat ho to dal de phir dhak kar 10-15 min high flame par pakaye uske baad ragda tayyar ho jayega

Boiled aloo ko ek bowl me dale usme namak aur cornstarch dal kar acche se mix kare phir tikki ka shape bana le phir ek mote tale ka tawa le oil dale acche se garam kare phir tikki ko tawe per dale aur flame ko low karke dono side crispy hone tak cook kare uske baad tikki taiyyar hai
