I actually love zucchini, but there definitely comes a point where I’m staring at another one thinking, 'okay, what haven’t we done with you yet'?

These crispy zucchini fritters are one of those recipes that makes the answer easy. They’re crisp around the edges, tender in the middle, full of Parmesan, and honestly disappear much faster than plain zucchini ever does.

They work as an easy side dish, snack, or something to put out while dinner is finishing up.
