La collina blu La Collina Blu is our artisanal Extra Virgin Olive Oil from Tuscany. A small project made with much love. We pick, bottle, and label by hand. Who knows?

We make very few bottles aiming for high quality. La Collina Blu is made with the typical Tuscan olive varieties: leccino, frantoio and moraiolo. We press our olives within a couple of hours after picking to keep important antioxidants and vitamins. A high-quality Extra Virgin Olive Oil is not only excellent in flavor - but it is also healthy. La Collina Blu is a project that I and my husband, who

builds olive oil presses, have been working on for a long time amidst kids and work and daily life. The name La Collina Blu is a tribute to the beautiful blue light that surrounds our Tuscan hill just before sunset. But it is also a tribute to Blue Hill, the complicated suburb north of Stockholm where I grew up. Here, kids start out with very little, but with a little love and trust, they are capable of giving back much more than you could ever imagine. Just like olive trees. To me, olive oil is something that unites my two worlds. In Blue Hill my mom bought the first olive oil I ever tasted from a little Greek supermarket. For a Swedish family it was exotic and a new discovery in the 1980s. My husband Stefano builds olive oil presses (and is the real olive oil nerd in the family), and when I go back to Sweden, my boys and I always bring back a shoot from the olive tree in our garden to put on my father’s grave. Maybe one day all of the shoots that we’ve put there for the last twenty years will turn into an olive tree. The label is made by Francesco Giani, an artist, and friend, and recalls the thirteen-floor tall houses and their thousands of windows, in Blue Hill. Houses that were built in the ’60s to host the first immigrants arriving in Sweden.

La Collina Blu is a tribute to the beautiful blue light that surrounds our Tuscan hill just before sunset. It is also a tribute to Blue Hill, the complicated suburb north of Stockholm where I grew up. The label reminds the thirteen-floor tall houses and their thousands of windows in Blue Hill. Here, kids start out with very little, but with a little love and trust, they are capable of giving back much more than you could ever imagine. Just like olive trees.

One if the persons that gave a lot (in his own personal way😜) is my basketball coach Suleyman Boyaci, that I went visiting two years ago after 25 years (did I cry?)

Suleyman, who started Harem Basket in Blue Hill to get kids off the streets, coached all the teams and spent more time with us than at home.

We, who had uniforms that were too small and were laughed at, were crammed into Suleyman’s red Volvo station wagon (read: trunk) to get rides to the games when all the parents were working. We received the worst practice times and gymnasiums - and yet we won everything!

So many of us learned that hard work pays off, to be both a leader and a team player, and that when you’re about to lose, you work harder. Many of us went on to national teams and college scholarships, but perhaps most importantly, we learned the lesson that alone, you are nobody - and that small projects with big hearts sometimes can make a difference.

Bottling some samples of since we are waiting for new labels with the right shade of blue. If it’s called La Collina Blu you have to be picky about the color…💁‍♀️ and printing labels is a nightmare. Something always goes wrong. But hey, this year’s extra virgin olive oil is great, healthy and a lot of olives but low yields (9% of oil instead of 12-13%) but you can’t have it all and when you drive in the Tuscan countryside you can’t be but happy, can’t you?

This is how we do it -
I love the moment when our green gold is finally arriving. It’s the same great emotions every year. 😍

1. Harvest- Olives are harvested and then brought to the press as quickly as possible. The fresher the olives the better the oil.
2. Defoliation- This step involves removing twigs and leaves from the olives to ensure only the fruit is processed.
3. Washing- The olives are washed to eliminate dirt and contaminants.
4. Crushing- The olives are mechanically crushed to create a paste and extra virgin olive oils are cold pressed meaning the temperature must not exceed 27°C (80°F) to preserve quality. This is done to maintain the oil’s natural flavors, aromas, and beneficial compounds, ensuring a high-quality final product.
5. Grading - The crushed paste is homogenized to ensure uniform consistency and to create bigger drops of oil.
6. Decanter - This process separates the oil from the vegetable water and pomace through centrifugal force.
7. Filtration - The extracted oil is filtered to remove any remaining solids and impurities.

Voila!

Soon we are ready to start bottling (I’m the bottling machine 🙋‍♀️😁🤓)
