Unagi Kaiseki offers a refined dining experience, beginning with seasonal appetizers and culminating in the star of the meal: eel, meticulously grilled to order. The freshly cooked rice is prepared in a traditional earthenware pot, using the rare and exquisite "Inochi no Ichi" rice, known for its sweetness and perfect texture. A touch of fragrant green sansho pepper from the Niyodo River in Kochi adds a refreshing finish.
The Special Unaju Gozen, with distinct lunch and dinner variations, features a vibrant array of seasonal dishes from appetizers to desserts. 「鰻の会席」では、先付けから季節の趣を映した品々が一品ずつ供され、主役の鰻はご注文ごとに一尾ずつ丁寧に焼き上げます。炊きたての土鍋ごはんには、甘みと粒立ちに優れた希少米「いのちの壱」を使用し、高知・仁淀川産の青山椒の粉が爽やかな余韻を添えます。
昼夜で内容を変える「特選 鰻重御膳」は、前菜から甘味まで季節の彩り豊かな品々が並びます。炭火焼の鰻は、旨みを引き立てる銘柄米のごはんに乗せてご提供。食後には季節を感じさせる爽やかな水菓子で贅沢なひとときを締めくくります。
