A dinner that brings harmony through the art of fermentation.

The “Koujibana course” is a short seasonal experience built entirely around fermented ingredients — shio-koji, rice koji, sake lees, and fish sauce — thoughtfully layered from appetizer to dessert.

🍋🍶Begin with a “live” cocktail of fermented lemon pepper and doburoku
A deliciously balanced dinner built around fermentation.

The “Koujibana Course” is a full fermentation-themed dining experience, featuring everything from appetisers to dessert made with fermented ingredients such as shio koji, rice koji, sake lees, and fish sauce.

To start, guests can enjoy a signature “fresh” cocktail made with fermented lemon pepper and doburoku.

The appetisers offer small bites that showcase the appeal of fermentation little by little, including low-temperature cooked pork shoulder with shio koji and Narazuke cream cheese.

The main dish is seasonal fish shabu-shabu served with an aged dashi broth, followed by sake lees raisin ice cream finished tableside for dessert.

The short course includes four dishes highlighting the flavours of fermentation, along with a welcome drink.
