spicy fried chicken
π1 to 2 whole chickens weighing around 700 to 1000 grams each, according to taste
BRINE INGREDIENTS [ENOUGH FOR 2 CHICKENS]
π700 ml or about 3 glasses of water
π45 ml or around 3 tablespoons of lemon or lime juice
π4 tbsp granulated sugar
π15 gr or around 1 tablespoon of powdered beef stock, so the aroma is stronger
π1 tsp ground coriander, removes fishy and musty chicken meat
π6 crushed garlic cloves or can be replaced with 2 tsp garlic powder
π30 gr or around 2 tablespoons Salt
π1 tsp Ngo Hiong Powder or can be replaced with Β½ tsp Nutmeg Powder, optional
πΒ½ tbsp Italian Mixed Herbs Powder [a mixture of Oregano, Thyme, Parsley etc], optional
β€οΈDRY FLOUR INGREDIENTS [ENOUGH FOR 2 to 3 CHICKENS]
π1 kg medium or multipurpose protein flour
πΒ½ tsp Micin, optional
πΒ½ kg High protein wheat flour
π110 gr or around 1 sachet of ready-to-use instant Kentucky chicken flour, optional
β€οΈDRY FLOUR SPICE POTTER [DRY BLENDED OR JUST STIR FLOODLY]
π12 gr or around 1 sachet of my village curry powder seasoning
π1 tbsp Beef Broth Powder
π1 tsp Garlic Powder
π1 tsp Salt, adjust according to the amount of flour used
π1 tablespoon mixed Italian herb powder, a mixture of typical Italian spices, namely Oregano, Thyme, parsley, etc. You can buy it at a cake shop, it's optional or you can skip it
π150 gr or around 10 tablespoons of Cornstarch as an agent so that all the spices can be smooth evenly when blended, and so that the fried chicken results in a more crunchy, long lasting
1 tsp Baking soda, optional.
