TIPS
Bloom the yeast in warm coconut milk. This ensures the yeast is still active so that you can get a beautiful rise and the hollow centre.
Knead your dough like you mean it! Make sure the dough is supple before resting it. Margarine also helps with this suppleness.
Regulate your heat. Too hot? Youβll probably char the mahamri. Too cold? Wonβt rise fast enough and give you a gummy centre. Try shooting for a medium high heat and make sure you check your temperature before every fry round.

Beat the eggs well until the yolks and whites are fully combined. This introduces air and helps create a lighter, creamier texture. It also ensures the Royco dissolves into the egg and seasons every last drop.
Let the tomato break down completely before adding in the egg so that you arenβt eating chunks of tomato in your scrambled egg.
Cook the egg down to your preferred doneness. Some people like it runny (ew!) but with a little more heat and time you can firm up the eggs before garnishing with coriander.

Tips:
1. Need crispier fries? (without double frying because that is a lot of work lol) - Soak your cut potatoes in cold water for 30 minutes to an hour to remove excess starch, which helps make them crispier when fried.
2. If you want a healthier version, use an air fryer or bake the fries in the oven. Toss them in oil and bake at 450Β°F (230Β°C) for about 25-30 minutes, flipping halfway through

TIPS:

You will need:
π 150g all-purpose flour
π¬ 50g granulated sugar
π§ Β½ tsp salt
π₯ 4 large eggs
π§ 50g melted unsalted butter
π₯ 500g whole milk
π¦ 1 tbsp vanilla essence
TIPS:
1. Mix the eggs with the dry ingredients until all dry flour is mixed in. This ensures your batter is smooth when you add the butter, essence and milk.
2. After mixing the crepe batter, let it rest for at least 30 minutes (or even overnight in the fridge). This allows the flour to fully hydrate and the gluten to relax, resulting in tender, delicate crepes.
