Ugali stew si Ugali na stew Leo

Ugali using my number ☝️ premium maize flour

Make balls then dust them with corn flour then fry

Stew
Sauté your onions,tomato paste,tomatoes, garlic and hoho
Seoson with salt,paprika and onion powder
I added some plain yogurt to thicken the stew and some small teaspoons of sugar to balance out the acidity
Add your balls stir and a beef cube then serve…

Crab stew and deep fried ugali balls

Make the Ugali
• Boil water
• Add maize flour bit by bit while stirring.
• Cook until thick and smooth — firm, not runny.
• Let it cool slightly until it’s easy to handle.

Shape the Ugali Balls
• Scoop small portions and roll into tight balls (golf-ball size).
• Let them rest for 5–10 minutes to firm up before frying.
• Optional: dust lightly with cornstarch to help them crisp.

Deep Fry
• Heat oil until hot
• Drop ugali balls gently and fry until golden brown and crispy on all sides (3–4 minutes).
• Drain on paper towel.

Make the Crab Stew
• In a sufuria, heat oil/ghee
• Fry onion until golden.
• Add ginger-garlic paste → cook 1 minute.
• Add tomato paste + blended tomatoes and natural yogurt → simmer till thick.
• Stir in spices and season.
• Add the cooked crabs → toss and coat well.
• Let them simmer 5–7 minutes until glossy.
• Finish with lemon juice and sprinkle dhania.
