Foods Receiving & Sanitation Guidelines:
All food products which are coming in should be checked thoroughly, to make sure they meet quality standards stated in the operations purchase specification or recommended internationally in food safety procedures.

Below are some of the receiving Procedures:
1. Vehicle: Check the condition of the delivery vehicle. Look inside to see if the interior is clean. Is it an open-bed truck or an enclosed truck? Open-bed trucks have higher chances of product contamination.

2. Packaging: Check the package sealing if damaged or tampered with; don't receive it if opened.
3. Odors: Check the unusual or foul odours in incoming products.

4. Frozen Products: Check well & carefully on incoming frozen products, some might have stayed in the freezer long enough & appear Spoiled.

Fire 🔥 in food service.
Fire is one of the potential accidents cause in food service operations. Any food business should invest in fire equipment & good design for fire exits. The following precautions can help lessen the danger of fire.

1. Simple Measures: It's good to properly clean & maintain cooking equipment & exhaust hoods/filters. Check properly for any gas pipe leakages & any other. For sanitation as well as Safety reasons, limit Smoking to restricted areas.

2. Fire Extinguishers: Food service business owners should make sure fire extinguishers are enough & employees should be sure there are adequate of them at work. Also, they should be placed at strategic places & locations where everyone can see them. Local ordinances frequently require special fire extinguishing equipment under ventilation filters.

Regardless of the type (Dry Chemical, Carbon Dioxide, or Chemicals in Special Solutions), this equipment can only be effective if it is professionally designed installed, & maintained.

3. Fire Detection: In the rising world of technology, every food service business should consider investing in fire detection devices. These may be specialised equipment that detects Smoke, Flames, &/ or Heat. An automatic sprinkler system is considered the best. They are a very effective way to control fires.

4. Emergency Procedures: Management should invest in fire emergency areas & exits. They should also train employees on safety procedures & let them know where all emergencies are located, & fire drills should be conducted.

Local fire authorities or departments can help in designing emergency procedures. Ensure that all doors to the property are open out & that fire exits are kept clear at all times. Fire department contacts should be located near office telephone 📞 or easily reachable areas.

Allergens
An allergen is anything that can cause an Allergic reaction in a susceptible person. Common Allergic conditions include Coeliac disease, allergy to Gluten, Irritable bowel syndrome, and A gastrointestinal disorder, often resulting in food intolerance, lactose intolerance & intolerance to the sugar found in certain dairy products.

Allergen Precaution
To minimise the risk of allergic reactions to foods, we must be aware of everything that goes into it.
1. Always wash your hands thoroughly before and after handling foodstuffs.
2. Have information about the products & what ingredients have been used to produce them.
3. Avoid cross-contamination.
4. Store high-risk (allergic) foods separately.
5. Use separate utensils & equipment when preparing allergens foods.
6. Clean & disinfect (sanitize) all work areas that have been used to prepare allergic foods.
7. Provide consumers with safety assurances & information about what is in food.
8. Have information on ingredients and which are potential allergens.

Allergic Symptoms
• Respiratory reaction; such as Asthma
• Gastrointestinal reaction; such as Vomiting & Diarrhoea
• Skin reaction, such as Dermatitis
• Anaphylactic Shock results in a drop of high blood pressure, severe constriction of airways, multiple organ failure and or death.
